Most of us were raised with bread as a staple. When you were diagnosed with celiac or gluten-intolerance, and found out you were going on the gluten-free diet, what’s the first food you thought about having to give up? Most likely bread.
I went gluten-free in 1998, when I was diagnosed with celiac disease. The gluten-free diet did not get the job done and my gut was still cranky. So, in 2001 I went on the paleo diet. Since then, I’ve been both gluten and grain-free, and written a ton of paleo bread recipes. All of my bread recipes are quick breads, and they’re far more nutritious, low-carb, and easy to make than regular bread. I’ve tested all of these recipes several dozen times to perfect them for you.
Once they’re good to go, the process of making these paleo breads couldn’t be easier. It goes like this. Throw a bunch of ingredients in a food processor, and hit the “on” button to mix up the batter. Then, transfer it to a pan and bake it. The biggest challenge I have making these is to get the oven to heat as quickly as I can get the bread batter ready for it.

Finally, here’s a couple of tips for making my paleo bread recipes. Use the recommended ingredients, i.e., when the recipe calls for almond flour, don’t use almond meal, as it won’t work in the recipe and the results will be poor. In addition, use the recommended brands of ingredients. You can find those be clicking on the green text in the ingredients portion of each recipe. Additionally, use the specific pan sized called for in each of these recipes. If the pan you use is bigger than the pan I recommend, your bread will be flat.

Elena, I am confused on what bread pan to buy to make your Paleo Bread, etc. Your cookbook says to use Magic Pan which is aluminum. I have thrown my aluminum pans away for health reasons. I have read that anodized aluminum pans are also bad. Does a glass bread pan work to make your breads? Kim H

Hi Kim, thanks for your comment. Feel free to use a glass bread pan, the issue is that if you use a standard sized glass loaf pan when the magic line is called for the breads won’t fill the pan all the way and the breads will be very short. Since the magic line pan is smaller than a standard size loaf pan, you may also need to adapt the baking time :-)

Blnached almond flour is very expensive. Is there an alternative to this. Can we use millet flour or buckwheat flour or amaranth flour?

I am also seeking egg-free bread recipes because I’m just dying for a sandwich! Unfortunately I have an IgG allergy to eggs. You can only imagine how limiting my recipe options are given that I’m on the dairy-free version of the specific carbohydrate diet AND I cannot have eggs… :-( Elana, is it even possible to make a grain-free bread without eggs or does it just defy the laws of physics, lol :-) You’d have many grateful people thanking you if you could figure this one out!

Hi there. The bottom right features a bread that almost looks like it is made of poppy seeds. It’s a different color than expected. Maybe chia…So I was curious which recipe it could be. I may have missed it, but I don’t see the pictures captioned with their corresponding recipes and I looked at all the recipes and I don’t see that particular picture on the linked pages. Now I have to know which one that could be! Please let me know ; )
