It’s so good though, that the boys enjoy it year-round.
When I serve it to them, I melt butter and honey together and drizzle it over the warm cornbread straight out of the oven.

How to Make a Cornbread
This recipe for Gluten Free Cornbread Skillet is made with six ingredients total.
All you need to do is throw the almond flour, flaxmeal, salt, and baking soda in a food processor, then pulse in the eggs and apple cider vinegar.
Transfer the batter to a greased cast iron skillet pan to bake and voilá.
Warm keto cornbread straight out of the oven.

This homemade corn bread recipe is so dang easy it won’t bog you down when you’re cooking Thanksgiving dinner.
It’s also wonderful to throw in the oven as an after school snack for your little ones on a chilly day.
In fact, they might want to help you make it like mine did.
Gluten Free Cornbread Skillet
- 2 cups blanched almond flour (not almond meal)
- ¼ cup golden flaxmeal
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- 5 large eggs
- 2 tablespoons apple cider vinegar
- In a food processor combine almond flour, flaxmeal, salt, and baking soda
- Pulse in eggs and apple cider vinegar
- Transfer batter to a greased 9 inch cast iron skillet
- Bake at 350°F for 20-25 minutes
How to Store Cornbread
I often make this Gluten Free Cornbread Skillet a day ahead of time.
After it bakes, I let it cool, then remove from the skillet.
To store, I wrap the cornbread in a paper towel, then zip it into a plastic bag and place it in the fridge.
It will keep for up to four days when stored this way.

If you’d like cornbread that’s sweet, but still keto, you can add one-eighth teaspoon of stevia to the batter.
I’ve made it that way and it’s fantastic.
I think it would also be amazing with a tablespoon or two of honey added to the recipe, but I haven’t tried that so not sure if other ingredients need to be adjusted accordingly.

What is a substitute for blanched almond flour? Is there adjustment to other ingredients if I use another type of flour? I have arthritis. Almond flour is high in oxalates although the blanched almond flour has less oxalates. Would appreciate your help so I can start using your recipes.

How I make this have a richer taste: substitute the chicken eggs for 3 to 4 duck eggs (yolk size matters), and use duck fat to grease the cast iron pan. This goes very well with savory – sun dried tomato pesto (as a spread), or just salted butter; and the sweet palette – huckleberry honey, apple butter, etc. Note that if the baking soda is old you will not see “fizzing” – the reaction when mixing vinegar with baking soda, and thus your bread will be “flat.” I also let this “rise” a bit before adding the mixture to the cast iron pan.

Shared a pic of mine some time ago. Been making this recipe for a few years now. My thing is to treat the skillet just like I used to make regular cornbread and add a dollop of bacon grease to the skillet over a burner then pour in the batter before putting in the oven. Makes a beautiful crust all over

this is such a versatile recipe. I make it all the time. tonight I added 1/2 a chopped onion, a seeded and chopped jalapeno, some herbs and canned salmon. fried patties of the mixture in peanut oil. served with homemade tartar sauce. The whole carb chomping family loved it.
