Cinnamon Coffee Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

This post is an oldie but goodie from the archives. I first shared this Cinnamon Coffee Cake recipe in March 2015.
I rated this recipe 5 stars because I really love coffee cake but I did have to tweak the recipe to make it work for me.
My tweaks mostly have to do with the topping. For me, 2 tablespoons of cinnamon is WAY too much. I reduced it to 2 teaspoons and it is still has great cinnamon flavor.
The second tweak is that I reduced the coconut oil in the topping to 2 tablespoons. I found that 1/4 cup of coconut oil keeps it from fully cooking and makes it oily.
My final tweak is just based on my desire to reduce the sugar a little. I used 2 tablespoons of coconut sugar and 1 tablespoon of a monk fruit/erythritol blend.
The only tweak I made to the cake batter is to add a 1/2 teaspoon of cinnamon to the mixture for a little cinnamon flavor that is more disbursed than just the topping.
Please try this recipe if you like coffee cake. While I wish there wasn’t 1/2 cup of honey in the cake, the almond flour, eggs and sliced almonds give this breakfast treat a healthy kick. But also try it just because it is good.

I have been making this as a sugar free cake in an insta pot. I sub blue agave for honey. I chop one apple to add to the topping. I add 1/2 the topping mixture between the cake mixture and then add the rest on top. I I add cinnamon in both cake and topping. Cook in springform pan that fits instapot about 50 minutes. Check the cake texture, if needed cook 5-10 minutes more.
New favorite is blue berries to apple with walnuts instead of almonds.
Then I eat for breakfast with Trader Joe’s apricot mango yogurt. The best!
Tried fresh peaches or pineapple but have not perfected yet.
My husband’s blood sugars are stable with this cake!
