Specific Carbohydrate Diet
It’s not easy to find great SCD recipes, but I’ve written hundreds since going on this diet in 2001!
The Specific Carbohydrate Diet (SCD) is a diet created by my late friend, Elaine Gottschall, whose views on gut health were well ahead of her time, and are detailed in her book, Breaking the Vicious Cycle.
The SCD eliminates grains and other starchy foods containing complex carbohydrates such as potatoes. On this diet simple carbohydrates that require less time in the digestive system are consumed in order to restore health, and reduce inflammation, in the gut and the entire body. The premise of the SCD is to eliminate gut dysbiosis, which is a disturbance of the microbial community in the digestive system, that takes place when good bacteria are destroyed and bad bacteria take over.
The SCD is used to treat a variety of GI disorders including irritable bowel syndrome (IBS), irritable bowel disease (IBD), celiac disease (CD), Chron’s, and ulcerative colitis (UC). I have hundreds of SCD compliant recipes with everything from SCD bread recipes, to SCD desserts, SCD dinners, and so much more!
