Hi Elana,
Just wondering if the dough can be frozen or if the baked biscuits should be frozen and reheated? What works better?
Elana says
Colleen, I haven’t tried that, if you do I hope you’ll LMK if it works :-)

Tip: I treated this recipe like the gluten version of biscuits. All ingredients were kept cold (eggs, coconut oil, and almond flour). I mixed the cold eggs and half of the honey together first, added the cold dry ingredients – mixed those together (not beat) first. When most of the dry and egg/honey mixture was incorporated I added the cold (not melted) coconut oil (cold = solid state when left in pantry during the winter months.) I used a fork to “cut” in the coconut oil (same as cutting in cold butter for traditional biscuits.) I did not use my hands since I didn’t want the heat to transfer. I rolled them out slightly, cut as directed, then used a silplat to bake. I think the key here is COLD ingredients. They came out perfect – even with half the honey. I topped with goat cheese and wild blueberry.
Elana says
Marisa, thanks for the comment. I like your topping idea of goat cheese and blueberry.

These are the first recipe I’ve ever made with almond flour. Even though I didn’t stick to you recipe because I didn’t gave some of the ingredients they turned out wonderful so thank you for the recipe! I made half a batch. Used egg whites, avacado oil, and xylitol but used all your ratios. They were so delicious. Oh and they were wetter than real biscuits so I just made drop biscuits. They were beautiful and tasty!
Elana says
Tacy, thanks for letting me know these turned out beautiful and tasty!

Any idea if avocado oil would substitute okay for coconut oil?
Elana says
Donna, I haven’t tried that so not sure :-)
