Growing up in Davis, a small town in Northern California, I made treats for our family friends and wrapped them in boxes bought from our local Chinese restaurant.
This was the 1970s, long before the advent of Michael’s and other craft stores.
Homemade Cookies for Christmas
I’d stuff each box with my homemade cookies and fudge, then add the finishing touch, a pretty red ribbon.
After that, my parents would drive me all over town for our own Christmas cookie delivery.

When the boys were teenagers, our family “Christmas cookie delivery” ended because my healthy Christmas cookies rarely made it past the kitchen counter.

When I made piles of the healthy cookie recipes above, the boys and their friends were pretty darn happy.
They had a gluten free Christmas cookie feast and left me with a pile of crumbs. I loved that they were devouring healthy treats for the holidays.

I love your recipes (not just the cookie recipes)! Re the Vegan Peanut Butter Cookies: In the description it says “…if you need a nut-free cookie there’s a substitution that will do the trick!” I see where sunbutter subs for peanut butter, but what subs for the almond flour? Thank you.

How long do these cookies last and how can I store them? I’ve got 4 christmases to go to and need to bring treats my family can eat. Think I can make cookies in bulk and freeze them? Or will they last a while? I just don’t know if I can cookie it up every week for 4 weeks in addition to everything else!! Adore your recipes!!!

Elisa, I love that you say, “cookie it up” above, that is soooo cute! I made a bunch of these on Friday and delivered them as gifts on Sunday and they were great. I think these will keep even longer if wrapped and refrigerated –likely for up to a week. I haven’t tried freezing them, so not sure how well that works. If you do please stop back by and let us know :-)

Thank you for sharing these delicious looking recipes. I was wondering if you bake them this far ahead of Christmas and then freeze them ? I would love to give an assortment as gifts ! Do you have any tips for freezing them?

Lynne, I usually bake these and give them out a day or so later and they maintain their freshness. I haven’t experimented with freezing them. If you do please let us know how it goes :-)

Hi Elana! I know this is an old thread, but in case anybody is planning their Christmas treats too…I made the samoas last year and the are AMAZING!!! They froze beautifully. The texture is like a bakery cookie and lost nothing in the freezing process. I froze them on a cookie sheet and then stacked them in a container, for about 4 weeks. When serving I immediately put them on a single layer plate so if the chocolate and caramel softened they wouldn’t stick. I had two batches, one for each family party, and had a hard time protecting that second batch!!! It was so nice to have a beautiful cookie to serve and give again! Sometimes gluten free recipes, despite being delicious, leave something to be desired on the presentation side!:-) Thank you for your wonderful recipes! Can’t wait to try some more this year.

Beautiful recipes Elana. Thank you for inspiration and for sharing. You are full of creative ideas and delicious treats to make. Please can you suggest an alternative to Palm shortening you use in many of these recipes. Due to Orangutans being pushed to extinction by destruction of their natural habitat, replaced by commercial planting and intensive use of Palm oil products and shortening, myself and many people are refusing to use Palm oil, Palm shortening or any products with Palm oil in, to try and help save Orangutans, wild life and their environment. Please provide or advise an alternative to Palm shortening to bake with in your recipes. Thank you.

I see you use almond flour a lot. Hope this question is not silly, but is it actually almonds? My husband is allergic to tree nuts (they give him headaches) so I’d want to be sure before I let him eat them. Our daughter is allergic to wheat, so I’m interested in wheat free baked goods (gluten-free has been a big help for making up the missed foods).

Thanks for all your efforts in creating familiar tastes attainable to all. I do not feel deprived any time of the year. The Lemon Almond Biscotti is AMAMZING! I altered your recipe a tad by adding the juice from the lemon and its entire rind for a strong burst of lemon flavor and upped the honey a bit. Amazing My granddaughters (4 and almost 2) were in competition to see who could gobble them up faster. They exclaimed “Grams, make these again tomorrow!”… well I plan on making them again and again but maybe without their knowledge on occasion that is if I want some.Have a lovely Holiday Season and Thanks again.
