Hi Elena, i just got your book I have a question about the almond flower. Here in the Netherlands its al called almond meal . The one that is made from blanched and peeled almonds, is oké right?? They also have very finely grated used for macarons ( But also called meal). Are they both the right ones?

Saskia, if you are buying a product made with blanched almonds that are peeled and ground then that is the right one, as long as it’s very fine and not coarse :-)

Elena, the Blueberry French Toast Casserole looks terrific….but it also gave me the idea that your Paleo Bread might be the solution to making a LC Holiday Strata casserole….I used to make a spinach, mushroom, ham and cheese one for Xmas and really missed it per never having found a good LC bread that would work. What do you think? Can I add that to what must be a long list of Wish List items your readers beg for. Fingers crossed.

Thank you for the great Mother’s Day ideas! I always appreciate getting your emails sharing the next holiday recipes.
I especially like your Passover matzo since I I’m allergic to things like tapioca flour, potato starch… Which is the option for gluten free Matzo.
I’ve always wanted to share, with you, a recipe that I made up when I first went on a paleo eating plan six years ago. I had a lot of inflammation and my doctor said no more grains, no dairy… It has been great but at first, I was missing every goodie. So this is what I came up with:
Peel and slice a banana lengthwise, so you have a plank and cut into three pieces.
Smear your favorite almond butter as thin or thick as you like.
Top with a crisp piece of turkey bacon ( or bacon of choice – I bake mine in batches in the oven).
If you really want to get fancy, dip half of it in some melted life’s good or other chocolate chips and chill in the refrigerator.
All of my cravings for anything with preservatives or fillers was a thing of the past.
