Growing up my parents bought a tasty frozen coffee cake at the grocery store as a special breakfast dessert treat. This is my healthy copycat version!

If you’re wondering how to make cake with almond flour my healthy homemade coffee cake is the answer. This easy cake recipe is made with only six ingredients:
- Almond Flour
- Salt
- Baking Soda
- Coconut Oil
- Honey
- Eggs
You can throw this easy coffee cake recipe together in no time flat. The cinnamon topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

Cinnamon Coffee Cake

Ingredients
Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
Topping
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
Instructions
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

Hey there. I’m pretty low on all my oils/fats in the house. Could i maybe use Grapeseed for cake, and butter for topping? (instead of Coconut oil?)

This recipe is even better than the one in the almond flour cookbook! I had to bake it quite a bit longer. I used agave instead of honey since it was handier at that moment. I also used MCT oil for the coconut oil in the topping since the MCT was already liquid. I also skipped to sliced almonds. Bye, I almost never follow a recipe exactly.
I want to add a side note regarding coffee cakes. My mom used to make a recipe called “George Mardikian Armenian Coffee Cake” that has like a candied bottom. To me, it was the best coffee cake recipe. I happened to look up George Mardikian and saw he was some kind of celebrity chef. Anyway, his coffee cake recipe starts by mixing 2 cups brown sugar, 2 cups flour and 1/2 cup butter. Press half the mixture into the bottom of a 9” square pan.
When I made this (Elana’s) coffee cake, I mixed 1 cup coconut sugar, 1 cup almond flour and 1/4 cup coconut oil and pressed in the bottom of my pan before I followed Elana’s directions with the changes I already mentioned. My coffee cake tasted just like my mom’s! The bottom actually seemed sweeter than I remembered so perhaps any readers might want to tweak the amount of coconut sugar. Next time I might top the cake with just walnuts and cinnamon and skip the oil since the almond flour and walnuts already contain so much fat……although my cake did not seem oily at all.

This was very good. But I thought that the cinnamon walnut mix got lost on the bottom. I made it in a bundt pan. Maybe some could have been added to the bottom of the pan to add to the top of the coffee cake. If it were in a cake pan, I could have flipped it over on the serving plate. Also, I love what vanilla extract adds to baked goods, and I added more than you called for. It was perfect. Otherwise, this was lovely and will become my go -to coffee cake recipe. Thank you for such an easy and gluten free recipe!

Hello – love this recipe! I’ve made it twice and it’s become a favourite.
I would like to make it this weekend for Easter and am wondering if I use a deeper cake pan if I can make it a two layer cake? Any suggestions on baking time if I attempt that?

I can attest that this recipe is insanely good! Whenever we have a special occasion, I make this cinnamon cake the night before so we have it to look forward to in the morning. The most recent being my hubby’s 30 birthday! He said it was the only gift he needed. Lol. It takes a few minutes to whip together and really impresses with morning coffee. I don’t usually have coconut oil on hand, so substitute it for butter.
