Growing up my parents bought a tasty frozen coffee cake at the grocery store as a special breakfast dessert treat. This is my healthy copycat version!
How to Make Cake with Almond Flour
If you’re wondering how to make cake with almond flour my healthy homemade coffee cake is the answer. This easy cake recipe is made with only six ingredients:
- Almond Flour
- Salt
- Baking Soda
- Coconut Oil
- Honey
- Eggs
You can throw this easy coffee cake recipe together in no time flat. The cinnamon topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

Cinnamon Coffee Cake

Ingredients
Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
Topping
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
Instructions
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

It’s in the oven now!
The batter consistency was great but the topping was really wet. I had to stop at 4 tsp Cinnamon cause I ran out.
Do you think that if I had added the two extra tsp of Cinnamon the topping would have been crumblier?

I have just started experimenting with almond flour recipes. I’m coming off of Whole30 and was not ready for anything too sweet. I cut the honey in half and added an egg to make up for the missing moisture. I used unsweetened coconut shards instead of coconut sugar, to make it more savory. I also reduced the cinnamon to my own tastes.
My son and I enjoyed the cake a lot! I’m making it again for the church ladies this weekend. I’m thinking of using gee instead of coconut oil in the topping, just to add that buttery flavor.
I would be interested in any other almond flour recipes that you would suggest!
