Growing up my parents bought a tasty frozen coffee cake at the grocery store as a special breakfast dessert treat. This is my healthy copycat version!
How to Make Cake with Almond Flour
If you’re wondering how to make cake with almond flour my healthy homemade coffee cake is the answer. This easy cake recipe is made with only six ingredients:
- Almond Flour
- Salt
- Baking Soda
- Coconut Oil
- Honey
- Eggs
You can throw this easy coffee cake recipe together in no time flat. The cinnamon topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

As an aside, I love cake with almond flour because it’s the perfect low carb, rich base for gluten free cakes.

Cinnamon Coffee Cake

Ingredients
Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
Topping
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
Instructions
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

I can’t have any part of dairy. I react to it all so horribly I’m not even tempted to cheat….ever. Big inflammatory response and misery. If I don’t take charcoal, it takes months to get out of my body and I’m sick the entire time…up to four months. I travel with charcoal everywhere I go in case of accidental exposure to gluten, dairy, soy, or refined sugar. This recipe looks great. I have your cookbooks and love them. I’ll probably try this and cut the sweetener in half. I have a birthday coming up, so it would be good to try this and share it with friends.

I grew up in Wisconsin (the dairy state) eating dairy at every meal. I no longer eat ANY dairy because I am extremely gluten sensitive. The dairy protein chain is so close in structure to the gluten protein chain the body sees both as the same & attacks both. I feel awful when I eat dairy now so I don’t eat it any more.

I love everything dairy but it doesn’t love me. I have a bad reaction to whey, not caseine, just the whey, which I’m told is unusual. Nevertheless, when I do eat dairy with low whey in it like hard cheese, I still get inflammation, thus, body aches. It’s hard because I crave all dairy foods.

I made this yesterday and used Lakanto Golden sweetener. It turned out amazing! I started with 1/3 c but added a bit more (I think some of the “sweetness” bakes out) but not a full 2/3 c. Used in topping too. Baked it for about 30 min. It’s delicious!! Thank you for all your great recipes Elana!
