If you’re wondering how to make cake with almond flour my healthy homemade coffee cake is the answer. This easy cake recipe is made with only six ingredients:
- Almond Flour
- Salt
- Baking Soda
- Coconut Oil
- Honey
- Eggs
You can throw this easy coffee cake recipe together in no time flat. The cinnamon topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

Cinnamon Coffee Cake
Ingredients
Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
Topping
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
Instructions
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

Hello! I believe this is my second time leaving a comment for this all star recipe! I made it again but this time used Macadamia nuts on top. I usually do pecans (state tree here in TX). I subbed butter for coconut oil. And accidentally used all the melted butter in the batter so then melted more for the topping. It still totally worked! And I doubled the coconut sugar for the topping. SOOOOO good! Thank you again, this is absolute heaven!

It’s in the oven right now, smelling good! Just checking on this detail, is it really 2 TBS of cinnamon or is it supposed to be 2 tsp in the topping? I’ll probably have my answer in about 15 mins more when it’s cooked and cooled and I’m eating it. Yum.

This recipe has become my go-to reciope basic for all occasions. This time I wanted to use a granular sweetener. So I used the amount required in the recipe knowing I would have to add some kind of liquid. For that, I used about 1/8 cup of applesauce.
Because my son’s apricot tree had a bumper crop this year, I made a jam from aome of the apricots. sI used it in between 2 layers of the batter. The top of the cake was decorated with sliced apricots. Cinnamon was sprinkled over all and the glaze was spread on top of the sliced apricots.
Since I made a double recipe, the second cake had just the jam/glaze on top with sliced almonds sprinkled over all.
The important thing to remember is that the cakes baked longer than what the recipe called for. (Also the pan was smaller and remember there are double layers.) I was continually checking for doneness with a toothpick. Bottom line – it was delicious and very moist which is more to our liking.
