Growing up my parents bought a tasty frozen coffee cake at the grocery store as a special breakfast dessert treat. This is my healthy copycat version!

If you’re wondering how to make cake with almond flour my healthy homemade coffee cake is the answer. This easy cake recipe is made with only six ingredients:
- Almond Flour
- Salt
- Baking Soda
- Coconut Oil
- Honey
- Eggs
You can throw this easy coffee cake recipe together in no time flat. The cinnamon topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

Cinnamon Coffee Cake

Ingredients
Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
Topping
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
Instructions
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

This is pretty good. I subbed in olive oil for the cake, and used butter for the topping. I think butter would have been better for the cake, but I don’t know if it’s Paleo-approved. Also, I used stevia/monk fruit sweetener instead of coconut sugar, because that is what I had on hand.

My husband and I love this cake and I’ve made it for him fairly often this year, after discovering it. I forgot to make the topping the first time and he didn’t notice and likes it in its own right! I add the cinnamon into the cake instead.

I used 3 T of flax meal plus 6 T of water instead of the 3 eggs and also replaced the coconut oil with unsweetened apple sauce. I ran out of honey so used maple syrup in one batch. I made them as cupcakes & baked 18 mins… they were perfect! Thank you for an amazing recipe!!

I made this for my husband … he likes his cake but I’ve been trying to get away from highly processed cakes. It turned out really well using avocado oil instead of coconut oil. I forgot to put the topping on before baking but it’s still delicious!
