Growing up my parents bought a tasty frozen coffee cake at the grocery store as a special breakfast dessert treat. This is my healthy copycat version!

If you’re wondering how to make cake with almond flour my healthy homemade coffee cake is the answer. This easy cake recipe is made with only six ingredients:
- Almond Flour
- Salt
- Baking Soda
- Coconut Oil
- Honey
- Eggs
You can throw this easy coffee cake recipe together in no time flat. The cinnamon topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

Cinnamon Coffee Cake

Ingredients
Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
Topping
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
Instructions
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

I have read that coconut sugar does not kill the trees and also that it does. Do you have a source for that? Ayurveda teaches that cooking with honey is dangerous, even adding it to hot beverages with just the liquid hot. The reason seems to be that some of the flowers the bees pollinated may be toxic and the toxicity may come out when heated. At any rate, I have friends from India who are very strict on this, so I am looking for substitutes for honey when baking. I often use coconut sap sugar and have found that in Elana’s recipes I can substitute coconut sugar for the honey and be just fine even though one is wet and one is dry.

Coconut sugar is made from the nectar of the flowers. It does not hurt the tree.

Was under the impression that coconut sugar was not so good for the environment. Unlike coconut oil or coconut flour, coconut sugar requires the killing of the tree? Cake looks good though…

This looks awesome and I can’t wait to try it! I think the dairy is kind of a personal choice. I like Chris Kresser’s approach to paleo; there doesn’t have to be any kind of paleo law that dictates whether a person is really paleo or not. I do think, though, as far as dairy goes, that one should be cautious and see how they react to it. My understanding is also that choosing raw dairy should lessen the chances of having a reaction. I am hoping to add in sheep and goat cheese one of these days, but I really don’t know if I will react or not. I definitely react to cow’s dairy, which I think is common for people like myself with autoimmune disease.

Jenny do you know what part of cow’s milk you react to, i.e. is it the sugars or the proteins. In my case it is the casein protein, sheep and goat both have that protein just not as much.

Judy, I was muscle tested actually, and it showed that I reacted to the casein and the lactose. I understand that in sheep and goats dairy not only is it less but also different than cow’s dairy casein. I’ve been gun shy to try it… I am currently doing a heavy metal detox so will definitely wait until I get through that. I sure do miss cheese though!

Jenny I have discovered casein is casein be it cow or goat/sheep for me.
I throughly understand about missing cheese, whipped cream and butter. I use ghee(clarified butter) because it is pure fat no little bits of casein in it. Elana has a recipe for a whipped Coconut Topping that works quite well. But for cheese, the subs don’t have the right flavors or mouth feel. So if I really need/want some cheese, I just go for it. About an ounce or so grated on whatever I’m eating and then deal with the aftermath (itchy skin and a little stomach distress).

People are referencing a comment at the end of the blog post about whether or not dairy is now considered Paleo, not the recipe itself. The recipe is dairy-free. Some people wrongly believe that eggs are dairy, but they are not. They are just kept in the same section as dairy in most grocery stores.
