Growing up my parents bought a tasty frozen coffee cake at the grocery store as a special breakfast dessert treat. This is my healthy copycat version!

If you’re wondering how to make cake with almond flour my healthy homemade coffee cake is the answer. This easy cake recipe is made with only six ingredients:
- Almond Flour
- Salt
- Baking Soda
- Coconut Oil
- Honey
- Eggs
You can throw this easy coffee cake recipe together in no time flat. The cinnamon topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

Cinnamon Coffee Cake

Ingredients
Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
Topping
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
Instructions
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

Okay, but Elana is not from Europe. In the USofA a coffee cake usually has a crumb topping and is served WITH coffee. One of those cultural differences, like the English biscuit and the USofA cookie.

“Coffee cake” is typically a term used to mean a cake to be eaten WITH coffee….not a “coffee” flavored cake. Hope you try this anyway, sounds delicious!

It’s not a literal reference to coffee being an ingredient in the recipe. Coffee cake is a type of sweet cake usually vanilla with a crumbly cinnamon/sugar topping. Ironically, it is best enjoyed (in my humble opinion) with a nice hot cup of coffee! I love Tecchino, a dandelion tea sweetened with stevia drops. Yum!

I am so excited and am going to make this coffee cake this weekend! I want to make it right now but it wouldn’t make it through the night! I too loved coffee cake when I was younger. We always made ours with Bisquick.
As far as the Paleo thing, I am not sure about it all. I am not currently Paleo but have been thinking about it because I have health issues that might be helped by being grain free.
Being a pescetarian for 25 years, I can’t quite get myself to eat meat yet. It would make it easier if I could still eat some dairy. But if I go for it, I might omit dairy at first, detoxify and then try adding it to see if I have any reactions. From my understanding a lot of people react to dairy but don’t know it.

This is my first website response ever. I’ve wanted to say THANK YOU ELANA for some time. I am a life-long die-hard baker and when my naturopath told me I should really go paleo (as well as dairy/corn/soy-free), I had no idea how I would manage. She also told me about your website and it has been a life-saver.
I am also looking forward to this cake – I will try it with maple syrup rather than honey (my son cannot have honey and I live in Canada where we have lots of maple). Maple syrup has worked as a substitution in all of the baking recipes I have tried – for honey or agave.
I am about 80% pale and it has helped my digestion and improved my health through a difficult period.
Another substitution that works well for the soda bread is golden flax meal for 1/4 of the almond flour.

UPDATE: I made this recipe today with great success. I did not use a food processor but rather a stand mixer. I am too lazy to drag out my food processor whereas my stand mixer is always on my counter. Some recipes require the food processor but this one was fine in the mixer.
Also, I cut down on the cinnamon a little as I am not a strong cinnamon fan (about 1 and 1/2 tablespoons). I don’t really enjoy coconut sugar either. I find that it tastes burned and bitter. I used it in the recipe because I had some and wanted to follow the recipe as much as I could. But, next time I will use something else.
HINT: Consider making it in a spring form pan with a piece of parchment on the bottom. It makes it really easy to get out and slice. I use that pan for Elana’s Banana Chocolate Chip Cake too (in her cookbook).

I am allergic to cow’s milk and do not consider it to be paleo…..I have to use stevia for sweetener so how much is needed to replace the honey?

Dee, Coffee cake doesn’t normally have coffee as part of the ingredients. It’s just called coffee cake because it is commonly served with coffee or tea, etc.

I was also excited to get a coffee cake recipe only to discover no coffee in ingredients. In the UK coffee cake is cake that is flavoured with coffee, as any flavour cake goes with tea or coffee we just call cake by the flavours that are in it usually. What do you guys call cake flavoured with coffee?

Does the pan have to be metal, I have a 9″ stoneware round pan, would that work?

“Does the pan have to be metal…?” No, any pan with a similar volume and shape will work. You may have to bake a little longer or less because you changed the material of the container.

I used an Emile Henry pie dish, and it worked great. I just had to bake it for 40 min total.

Could I use almond pulp (from almond milk) that I ground into a flour instead of almond pulp?

Actually, that is what I tried this weekend. I was making almond milk and had read this recipe. I used 1.5 c of the almond pulp with 1 c of almond meal. The texture is denser than I think it would be with the almond meal, but it is very yummy. I baked it for the full 30 minutes also. Great recipe!
