When I went on a Keto Diet, I knew I’d need treats because I don’t believe in deprivation. So, I created Keto Blueberry Lemon Bread and wrote Paleo Cooking from Elana’s Pantry.
This easy keto bread recipe is perfect for dunking in my Dandelion Root Coffee which is not only caffeine-free but a fabulous liver cleanser. Talk about win-win!
If you’re wondering how to make Keto Blueberry Lemon Bread all you need to do is throw the ingredients in the food processor, transfer to a pan, then bake. It’s effortless!
This quick bread is a keto dessert recipe, which makes it more of a sweet bread. If you follow a higher carb diet it may not seem very dessert-like in comparison to the other foods you are eating, but we love it!
Low-Carb Blueberry Lemon Bread is delicious toasted and topped with butter or ghee, then smothered in my Low-Carb Plum Jam.
I haven’t experimented with using other sweeteners in place of stevia in this bread recipe so not sure how that would work, but if you do experiment please let me know how it goes. If you’re looking for more keto desserts with stevia check out my Mint Chocolate Chip Fat Bombs.

For best results follow the Keto Blueberry Lemon Bread recipe and use all of the ingredients. I’m often asked if the egg white protein powder is necessary and in fact it is. If you’re hesitant to buy it for this recipe only, do not fear, I have plenty of other recipes with Egg White Protein Powder for you.

To store Keto Blueberry Lemon Bread, let cool overnight, wrap in a paper towel, place it in a ziploc bag, and refrigerate for up to 1 week. I haven’t tried freezing this bread so not sure how long it would keep in the freezer.

Most of us don’t keep egg protein powder on hand as there just aren’t enough recipes using it to warrant buying it. So it becomes frustrating for me to want to try a recipe & have no clear substitutes for the ingredients that aren’t common.
What would you sub with Elana if you didn’t have it on hand – or would you too just not make it ?
Did anyone else try this recipe with something besides the egg protein powder – if so, please pass on what it was, how much you used & if it came out tasty ?

Per substitutions, I wish I could test various permutations of every recipe here to meet everyone’s needs, but there’s only one of me and a whole lot of you. Thank you for putting that list together ! I did look under “egg white protein powder” & after reading a few reviews of other recipes, I found a reader who said she used arrowroot instead, & one reader who said she just added another egg. I will try these as they are staples & see how the bread turns out !

I am allergic to almonds and use a product called Carbalose flour instead that I buy from Netrition: https://www.netrition.com/tova_carbalose_page.html
Have you tried using this flour? It is gluten free and lower in calories and carbs than Almond flour. I would love to adapt this recipe for use with Carbalose.

Made this bread yesterday. It tastes fine, but is heavy and not cooked through. Did not rise to the level of the pictures. Not sure what to do to fix it.

I was super interested at looking at all of the recipes but without the nutrition info, I didn’t go past the first recipe. Without the nutrition info, I won’t try the recipe, and without trying a recipe, I wouldn’t think of buying the book, so adding that info would be of benefit to you.

I really like this bread, I would like it a little sweeter though. Do you think I could add some monkfruit/erythritol sweetener to the recipe? Would I need to add liquid as well? Thanks for your amazing recipes Elana!

I use monkfruit in it and it’s good. I think I use 1/4 cup. I forgot to write it down. I also use the whey protein and it works great.
