If you’re wondering how to make cake with almond flour my healthy homemade coffee cake is the answer. This easy cake recipe is made with only six ingredients:
- Almond Flour
- Salt
- Baking Soda
- Coconut Oil
- Honey
- Eggs
You can throw this easy coffee cake recipe together in no time flat. The cinnamon topping has three additional ingredients –coconut sugar, cinnamon, and sliced almonds.

Cinnamon Coffee Cake
Ingredients
Cake
- 2½ cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ¼ cup coconut oil
- ½ cup honey
- 3 large eggs
Topping
- ¼ cup coconut oil, melted
- ¼ cup coconut sugar
- 2 tablespoons ground cinnamon
- ½ cup sliced almonds
Instructions
- Grease a 9 inch springform pan with coconut oil and dust with almond flour
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in coconut oil, honey, and eggs
- Spread the batter into prepared pan
- To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a small bowl
- Sprinkle topping over cake batter
- Bake at 350°F for 25-35 minutes
- Cool and serve

I just made this cake and it turned out fabulous. My question is regarding the coconut oil. Do I have to melt it for the cake batter portion? I didn’t today, as the weather is rather warm here and the oil is “smooshy” at room temperature – but it wasn’t melted. I’m wondering for when the weather gets colder and my coconut oil is more solid, what do I do? Thanks Elana! Great recipe. Elana strikes again. :-D

I only make this recipe as 12 large muffins (or 16 medium ones). I cut the time in the oven to 20-25. When I make this as a really special treat I also add 1/4 c walnuts and 1/4 c chocolate chips to the batter and pecans to the topping. Since my only concern is with being GF I use butter and maple syrup. They are incredible, just like the coffee cake of my childhood, and just as good the next day.

Angela, I leave mine out on the counter overnight to cool, after that I refrigerate it.

My daughter passed your recipe on to me and I must say it is definitely superior to other recipes I’ve tried in the past! I substituted mild olive oil for the coconut oil but it still worked a treat and tasted delicious! This cake will be one of our regular treats for sure!

Wonderful cake! I did have the amount of maple syrup instead of honey! Just used water to make the 1/2cup, for less sweet.. And used ground pecans in stead of almond slices cause it’s what I had on hand.. Amazing!

This cake was another wonderful recipe from you! I just started the SCD diet 2 weeks ago for IBD/Diverticulits. Pleased to say I am getting some relief! Without these wonderful treats from time to time it would be much more difficult. I made only a minor change because at this early stage I don’t want to eat whole nuts and I didn’t want to use coconut sugar (not sure if it’s legal). I made topping with just coconut oil, cinnamon and honey and swirled it into the cake….Delicious!!

I made this last night and the only change I made was I used pure Maple Syrup instead of honey. Only because I didn’t have any honey on hand. Let me say, this is the best coffee cake recipe ever!! So moist and scrumptious. I served it to someone who is a non believer in Paleo anything. He was even impressed.
I have been Paleo since November of ’09 due to Lyme disease. Switching to Paleo was life changing for me. I would like to dable in Keto soon.
