To make this keto dessert recipe for diabetics, simply heat the coconut milk and chocolate in a saucepan, stir to combine, then transfer to small dishes, like ramekins or mason jars.

2-Ingredient Chocolate Pudding
Ingredients
- 1 (13 ounce) can full fat coconut milk
- 1 cup chocolate chips (5 ounces)
Instructions
- In a saucepan, heat coconut milk and chocolate over very low heat
- Stir constantly until chocolate is melted
- Divide mixture between six ½ cup mason jars
- Refrigerate for 3 hours
- Serve

I haven’t tested this recipe with milk chocolate or semi-sweet chocolate because these types of chocolate have far more sugar and less fat than dark chocolate.

This is DELICIOUS. If you like good chocolate, this is perfect.
I got a pudding consistency and I get the idea it’s supposed to be thicker. Should I have drained the liquid from the coconut milk and added just the more solid, fattier part to the pan? I just dumped the can and didn’t realize how much liquid would go in with the chunkier part. Would that help it set a little thicker?

ARS, thanks for letting me know this is DELICIOUS! As indicated in the recipe, I use the entire can of coconut milk and do not discard any part of it. If you use the same brand of coconut milk as I do this pudding will come out very thick. Also, make sure not to use lite coconut milk :-)

I used the brands you recommended. It did thicken with more setting time. I just made it again and was not able to really drain the water, so just made it the same way, and this time it seems to have gotten thick faster. I think it’s because I used smaller containers this time. But I can’t really know for sure.

What brand of coconut milk do you use, and what amount? I bought vanilla coconut milk and it was in a quart container. I only used 12 oz., It seemed really thin after heating it and the chocolate.

Delicious flavor but the texture was off like a couple of people mentioned. So if it comes out grainy, what am I doing wrong? I followed the instructions and used the 85% chocolate.

I made this recipe today, but with the 85% dark chocolate. I made the mistake of throwing the chocolate pieces into the coconut milk in a pan directly over the burner and melting that way. It came out really grainy. I think next time I need to use a double boiler (or in my case, a metal bowl over boiling water :)) to melt the chocolate and incorporate the coconut milk, so that it doesn’t come out grainy. Still tastes good though! Thank you for all your great recipes, I love your site.

I had some very soft but not too soft Harry’s Berries (the sweetest strawberries I have ever had). I made a strawberry reduction and used it in place of the chocolate. Did not need any sweetener at all but I did add vanilla powder for a little depth of flavor. It was Fantastic! Next I will use the reduction with the fudgsicle recipe… alone or a layered popsicle with the chocolate it should be delicious. Thank you Elana for your kitchen inspiration!

I believe when substituteing cocoa for chocolate you are supposed to add oil. I don’t know th amounts hough.
