All you need is dark chocolate and coconut milk.

How to Make Chocolate Pudding
To make this keto dessert recipe for diabetics, simply heat the coconut milk and chocolate in a saucepan, stir to combine, then transfer to small dishes, like ramekins or mason jars.
Refrigerate to set up and voilá, you have 2-Ingredient Chocolate Pudding, a dessert recipe that’s quick!
2-Ingredient Chocolate Pudding
Ingredients
- 1 (13 ounce) can full fat coconut milk
- 1 cup chocolate chips (5 ounces)
Instructions
- In a saucepan, heat coconut milk and chocolate over very low heat
- Stir constantly until chocolate is melted
- Divide mixture between six ½ cup mason jars
- Refrigerate for 3 hours
- Serve

I haven’t tested this recipe with milk chocolate or semi-sweet chocolate because these types of chocolate have far more sugar and less fat than dark chocolate.

Given this issue, I’m not sure if the pudding will thicken and properly set up if these substitutions are made.

since I discovered this pudding recipe years ago, it became a staple in my home and I have forwarded the recipe to sooo many people around the world!!!!! It is delicious, easy and rich… I love it! the trick is to get the right coconut milk… if it is too rich you´ll have to remove from the fridge a little earlier to enjoy a more creamy consistency… if the milk is less dense, leave it chilling until the last minute… anyways, always a treat! All I can say, is thanks again for all your valuable info. All those years of trail and error. The pudding is such a comfort. It is all I can do, but limit how much I am making it. I go thru things so fast, and since I only leave my house when I go get a blood test, that eliminates shopping. It is very hard to stay on top of the pandemic. I just wish I could lose weight faster. I have made this delicious and simple pudding many times. Since I don’t follow a paleo of vegan diet, I add a couple tablespoons of butter after the chocolate is melted. Yum.

Mine didn’t set up thick. I reheated it next day and added gelatin. It set up then. I can’t understand why?

I add a pinch of Himalayan sea salt for mineral content,and a teaspoon of vanilla extract for taste. To stay true to the season I was adding a (homemade) pumpkin spice this fall, about a teaspoon will do. And also, because my kiddo is an athlete and burns calories before food reaches his intestines, I add a tablespoon of MCT oil to it in hope he want ask for food in next 10 minutes. In fact (I hope he won’t read this) I can also hide a scoop of collagen powder in this pudding, as we as a scoop of a bone broth powder. Deliscious! He loves it! It gives me piece of mind to concentrate on cooking something)))
