To make this keto dessert recipe for diabetics, simply heat the coconut milk and chocolate in a saucepan, stir to combine, then transfer to small dishes, like ramekins or mason jars.

2-Ingredient Chocolate Pudding
Ingredients
- 1 (13 ounce) can full fat coconut milk
- 1 cup chocolate chips (5 ounces)
Instructions
- In a saucepan, heat coconut milk and chocolate over very low heat
- Stir constantly until chocolate is melted
- Divide mixture between six ½ cup mason jars
- Refrigerate for 3 hours
- Serve

I haven’t tested this recipe with milk chocolate or semi-sweet chocolate because these types of chocolate have far more sugar and less fat than dark chocolate.

Given this issue, I’m not sure if the pudding will thicken and properly set up if these substitutions are made.

This pudding is excellent. I eat 85% dark cocoa on my diet “The Flat Belly Diet” . I’m not a fan of chocolate, it is way to sweet for me. I grew up being allergic to chocolate. Now I can eat and am not a fan. I could not tolerate just 85% cocoa bitterness. This is perfect and tastes great. I added fresh raspberries. Yummo!!!

Hello, just made this and it is delicious… but seems a bit runny after 3 hours. Should I leave it longer or is there a way to maybe add in gelatin to thicken it?

Caroline, this pudding is incredibly thick so no need to add gelatin. It will not thicken up properly when lite coconut milk is used :-)

I noticed the Green and Black is a 3.5 oz bar, and the brand I use, Theo, is a 3-oz bar. Since your recipe calls for 5 oz of chips, do you modify the proportions any? I have a can of coconut milk and a lovely bar of 85% dark, excited to make this.

Sarah, I don’t make any adjustments to the recipe, I simply weigh out 5 ounces of the 85% chocolate. This darker version of the pudding is amazing :-)

That pudding was legit! I sometimes get tired of the coconut flavor but this pudding was all chocolate. I used Lily’s stevia and erythritol sweetened chips. Only 55% but tastes much darker. I topped it with some raw heavy whipped cream. Wow!

Hi Elana,
We really really enjoy your recipes at our house!. No one has any food issues, we are just constantly looking for new and delicious ways to eat healthy. Last night we made the 2 ingredient pudding with
5 oz white chocolate chips, one tablespoon of vanilla bean paste and one can of full fat coconut milk. The white chocolate was at my 8 year olds request and of course has no health value but… the pudding set partially, to the point is was like slightly liquid custard in a trifle. It tasted amazing alone and with fresh berries, sort of like a liquid creme brûlée. Thank you again. Our other current favorites are Pizza Muffins and the Fudgsicles took us through the summer.
