All you need is dark chocolate and coconut milk.

How to Make Chocolate Pudding
To make this keto dessert recipe for diabetics, simply heat the coconut milk and chocolate in a saucepan, stir to combine, then transfer to small dishes, like ramekins or mason jars.
Refrigerate to set up and voilá, you have 2-Ingredient Chocolate Pudding, a dessert recipe that’s quick!
2-Ingredient Chocolate Pudding
Ingredients
- 1 (13 ounce) can full fat coconut milk
- 1 cup chocolate chips (5 ounces)
Instructions
- In a saucepan, heat coconut milk and chocolate over very low heat
- Stir constantly until chocolate is melted
- Divide mixture between six ½ cup mason jars
- Refrigerate for 3 hours
- Serve

I haven’t tested this recipe with milk chocolate or semi-sweet chocolate because these types of chocolate have far more sugar and less fat than dark chocolate.

Given this issue, I’m not sure if the pudding will thicken and properly set up if these substitutions are made.

So I have a question about the coconut milk. Since most coconut milks have guar gum in them, which I avoid, I use diluted coconut cream instead. if you go to Trader Joesamd buy the coconut cream in the brown can it has nothing added to it and its thick. It works wonderfully

Goya brand coconut milk has no guar or xanthan gums. It is available here in the Southeast. I buy it at Publix. Some stores have it the condensed milk section, and others have it in the International foods aisle.

Bobbi, this is a keto recipe and it is very low-carb. It is perfect for people that have reduced the amount of sugar (and other sweeteners) in their diet. When sugars are reduced or avoided, the palate adapts and things like coconut milk and dark chocolate taste very sweet :-)

I tried this today.
I added a bit of vanilla extract + 1 tbsp of cacao powder+ 1 tbsp of gelatin powder!
The result… AN AWESOME TREAT!!

This recipe turned out delicious! It turned out more like a fudge than a pudding, though. Does the recipe produce a fudge like consistency? I used the full fat coconut milk and 3 oz. 72% and 2 oz. 85%. Either way it’s totally amazing, very filling, and definitely satisfying for a sweet tooth. Thank you for the recipe.

I made it again today with my son and it turned out wonderfully! I realized I used 1 cup instead of 1 can of coconut milk the first time I made it, which is probably why it was thick and fudgelike. I do think the smaller portion of coconut milk along with the chocolate would be a good base for truffles. Something to try in the future!
