How to Make Chocolate Pudding
To make this keto dessert recipe for diabetics, simply heat the coconut milk and chocolate in a saucepan, stir to combine, then transfer to small dishes, like ramekins or mason jars.
Refrigerate to set up and voilá, you have 2-Ingredient Chocolate Pudding, a dessert recipe that’s quick!
2-Ingredient Chocolate Pudding
Ingredients
- 1 (13 ounce) can full fat coconut milk
- 1 cup chocolate chips (5 ounces)
Instructions
- In a saucepan, heat coconut milk and chocolate over very low heat
- Stir constantly until chocolate is melted
- Divide mixture between six ½ cup mason jars
- Refrigerate for 3 hours
- Serve

I haven’t tested this recipe with milk chocolate or semi-sweet chocolate because these types of chocolate have far more sugar and less fat than dark chocolate.
Chocolate Pudding Recipe Substitutions
Given this issue, I’m not sure if the pudding will thicken and properly set up if these substitutions are made.

I think people get confused (I often do) about coconut milk. They are now selling drinkable coconut milk in the grocery store as a milk substitute (think Silk or So Delicious). It is along side the almond milk, soy milk and dairy milk.
Canned coconut milk is different and really isn’t drinkable out of the can. You can buy full fat and reduced fat canned coconut milk. You can also buy canned coconut cream. Canned coconut milk and canned coconut cream are generally not interchangeable but you can make coconut cream out of canned full fat coconut milk by refrigerating it and then scooping off the hard coconut cream to use..
Recipe authors are going to have to be more specific about what they mean by “coconut milk” in recipes. I can usually tell by the recipe (in this case drinkable coconut milk wouldn’t work as it wouldn’t set well) but I often have to analyze a recipe to be sure. One clue is if it calls for full fat coconut milk they are referring to canned coconut milk as I haven’t seen full fat drinkable coconut milk.

I didn’t read the directions carefully, and added the whole can of coconut milk instead of just one cup. Used a conglomeration of 60% chocolate chips, 99%, and 100% chocolate baking bars. This morning I have nice solid pudding, albeit a bit on the dark side! It is delicious.

Patricia, when I have left over coconut milk, I just pour into an ice cube tray and freeze. Then remove the cubes and put in a freezer bag for next time. So far, the cubes have worked in every recipe I’ve tried. Anybody else tried this?
