I love serving this salad for weeknight dinners because it’s so easy to make. I also serve Radicchio Salad with Frisée and Apples at dinner parties and during Jewish holidays since it’s so colorful and festive. This healthy paleo side dish is a wonderful High Holiday salad, and also great at Passover.
This paleo salad recipe is based on an amazing salad that I had at Frasca, a fabulous restaurant in downtown Boulder. Their salad had salami. In this salad recipe I replaced the salami with walnuts so that this would be a vegan paleo salad for those that don’t eat meat.

Yum! I had radicchio leftover and no greens. So I made this without the frisée and also without the nuts (allergy). It was really tasty! Thank you!

I wasn’t a huge fan of the apples on this one, but turns out I like it very much! They added a fantastic texture that was unexpected. I don’t usually like unusual salads, but this was a hit. Kudos.
