Gluten-Free Corn Doggies Recipe
My gluten-free corn doggies made with almond flour are perfect if you’re on a low-carb Keto Diet. They won’t spike your blood sugar like gluten-free snacks made with corn, rice, or potato flour. Given that Celiac Disease and Diabetes ride on the same gene, this is important for me in staying healthy!
Keto Corn Dog Mini Muffins
Ingredients
- 1 cup blanched almond flour (not almond meal)
- 2 tablespoons golden flaxmeal
- ¼ teaspoon baking soda
- ¼ teaspoon celtic sea salt
- 1 tablespoon apple cider vinegar
- 3 large eggs
- 4 hot dogs, cut into 1 inch pieces
Instructions
- In a food processor combine almond flour, flaxmeal, baking soda, and salt
- Pulse in vinegar and eggs
- Transfer batter 1 tablespoon at a time to a paper lined mini muffin pan
- Place one piece of hot dog into each muffin cup
- Bake at 350°F for 20-25 minutes
- Cool 15 minutes
- Serve

We like to serve these with mustard which is a great low-carb condiment. Most store-bought ketchup has added sugar, but Primal Kitchen ketchup does not so we use that. Yikes trying to figure things out. Why called Corn Dogs when there’s no corn?
What is role of flaxseed in the recipe? Actually I might be in bigger trouble than that. Allergic to almonds (and I live in almond producing country!), eggs, and flax. Uhoh, looks like I might need to just do hotdogs. I don’t think vinegar, baking soda and hot dogs will make up too nicely. LOL Well they look wonderful ar least.

Linda, thanks for your question! This is a grain-free website. I gave up corn, rice, potatoes and all starchy grain-like foods in 2001 and haven’t eaten them since, so these are “corn” muffins :-)

Cathy, I haven’t tried that so not sure. If you do I’d be concerned they would dry out. When I make them ahead of time I refrigerate and then leave on the counter to come to room temp for a couple of hours prior to serving :-)

Friends are coming next week, & we all are following the Keto Diet. These look wonderful! Elana, is it necessary to spray, the mini muffin cup liners with coconut oil spray. I have no problem to spray because I would not like for them to stick to the paper? Thanks for ALL your amazing recipes!
