Fry up an onion in olive oil, while that’s happening, whisk eggs and combine them with salsa and cheese. Dump that stuff over the onion, then bake in the oven and you’re good to go.

Keto Huevos Rancheros Skillet Casserole
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced, about 1 cup
- 12 large eggs, whisked
- ½ cup salsa
- 4 ounces cheddar cheese, grated, about 2 cups
- ¼ teaspoon celtic sea salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat oven to 350°F
- Heat oil in an 9 inch cast iron skillet over medium heat
- Sauté onion for 10 minutes until soft
- Meanwhile, in a large bowl, combine eggs, salsa, cheese, salt, and pepper
- Pour egg mixture over onions
- Transfer to oven and bake for 30-40 minutes until set
- Remove from oven and allow to cool for 10 minutes
- Serve

curious about your take on the idea that olive oil should only be used raw, and should not be cooked with, that when heated the healthy properties are degraded and can turn to damaging free radicals. https://savorylotus.com/5-reasons-to-stop-cooking-with-olive-oil/ and that it’s better to cook with Avacado or coconut oil due to their higher smoke points. THanks.

Melissa, everything is a trade off. i prefer EVOO to other oils with higher smoke points because of its flavor as well as the fact that it has less sat fat.
