Mini Bagels with Cream Cheese

Bagels Cream Cheese Salmon
My full-size Bagels with Cream Cheese, pictured above, are perfect if you’re looking for a larger bagel.
But my Mini Bagels with Cream Cheese are fabulous for parties!
Mini Bagels
Ingredients
- 1½ cups blanched almond flour (not almond meal)
- ¼ cup golden flaxmeal
- 1 tablespoon coconut flour
- 1 teaspoon baking soda
- ¼ teaspoon celtic sea salt
- 5 large eggs
- 2 tablespoons apple cider vinegar
- 1 tablespoon poppy seeds
- 1 tablespoon raw sesame seeds
- 1 tablespoon onion flakes
Instructions
- Grease a mini donut pan with coconut oil and dust with coconut flour
- In a food processor, pulse almond flour, flax meal, coconut flour, baking soda, and salt
- Add eggs and vinegar and pulse until thoroughly combined
- Fit a pastry bag with a ⅜-inch round tip and fill bag with batter
- Pipe into prepared mold
- Sprinkle bagels with poppy seeds, sesame seeds, and onion flakes
- Bake at 350°F for 14-17 minutes, until a toothpick inserted into the center of a bagel comes out clean
- Let bagels cool in the pan for 10 minutes
- Serve

Not only are Mini Bagels with Cream Cheese one of my festive favorites, the boys dig ’em smothered in cream cheese and dripping with lox.
I don’t know why some folks call it bagels and locks, we’ve called it bagels and lox since I was a girl. Go figure!
After School Snack Bagels with Cream Cheese
Mini Bagels with Cream cheese were the perfect after-school snack for my growing guys.
I loved it when my older son and all his friends came home from school before baseball practice and gobbled these up!

This mini bagel recipe is based on the bagel recipe from my latest book, Paleo Cooking from Elana’s Pantry, made into little bagels.
I’ve then smothered them with everything bagel mix (poppy seeds, sesame seeds, and onion flakes) and topped with cream cheese.
It was my boys who asked for an everything bagel –i.e., a bagel with all the toppings.

This high-protein bagels recipe is made with almond flour, coconut flour, and golden flax meal, and contains eggs as well.

I’ve been quietly following you for years. We’re quite particular about bagels, are these chewy? Also, I don’t have a mini doughnut pan, will they just spread into a mess while baking?
