Elana, as a recipe developer myself, I don’t follow many recipes as I’m always creating my own, but I wanted to let you know that this recipe is one of my all time favourites. I crave it and make it very often!
To get perfect sandwich slice sizes of bread, I bake it in a cake pan, cut it into 6 large squares, and then slice those in half for 12 large squares total! It’s so perfect and I can’t thank you enough for this recipe!!
My favourite way to enjoy this is for breakfast with mashed avocado on top and a side of eggs!
I’m curious to try your other bread recipes now, but love this one so much that I haven’t experimented with the others! Do you have a favourite?
Thank you so much!!!!

Thank you Elana for ALL the awesome bread recipes. Love the Pumpkin bread and the Breakfast bread. I made the Paleo Flax Bread as per the recipe. I used a light flavoured EV olive oil. The bread was ok but the taste of olive oil was pronounced.
I made it again using “golden” flax meal and coconut oil instead of olive oil. Baked in an 8”x 8” (20cm) pan at 180 degrees (approx 350 degrees F) for 30 minutes.
The result – absolutely beautiful bread.
Elana says
Thanks Jan!
Olivia says
Hi, could you half this recipe and use a smaller baking tray?
Elana says
Olivia, I haven’t tried that so not sure :-)
Don says
Is it normal that the Paleo Flax Bread does not rise at all in the 9 by 12?Trying a loaf pan right now. There is enough rise that it will look like a loaf.Used the idea of wet ingredients and cream of tartar in the blender.Created a thicker batter with more volume.
Elana says
Don, thanks for your comment! If you use the loaf pan called for in the recipe you will have a perfect loaf of flax bread :-)
Lyn says
Elana, this bread is amazing. After trying your wonderful “rye” I decided to make this in a loaf pan and throw in 2 tbs of caraway. Voila! Paleo-pumpernickel. It is just like bread. No one would know it wasn’t rye.
xo
Elana says
Lyn, thanks for letting me know you are enjoying this bread :-)
Susie Hettleman says
I need to keep saturated fat consumption low because of gallstones. If I made this bread, do you think I could use 2 whole eggs and the rest egg whites? If so, how many whites would you suggest? Thanks.
Elana says
Susie, thanks for your comment! I haven’t tried that so not sure :-)
Mandy says
I just thought you might like to know, years ago I had gallbladder problems. I cut all fat out and it made it worse. My doctor informed me that you still need healthy fat. The fat in flax seeds would be healthy. So just be careful that you don’t go too low on healthy fat. I ended up in the hospital for 8 days with no food whatsoever just IV because of cutting out all fat. I thought cutting all the fat out was what you were supposed to do when you had gallbladder problems. I’m not trying to sound like a know-it-all, I would just like to save somebody from going through what I went through. It was worse than giving birth.

Elana this bread is wonderful…so soft and tasty. I made a loaf for my Mother who has diabetes and has decided to try a Ketogenic lifestyle. Elana, is there a substitute for arrow powder? on your other paleo bread recipe, it calls for 3/4 cup but I ran out.
Elana says
Patty, I haven’t tried that so not sure. Here’s a link to one of my bread recipes that does not call for arrowroot powder:

I just made this and I too used Golden Flaxmeal. I also decide to sprinkle a few poppy seeds on the top. It turned out terrific! So delicious and I love it. Definitely will be making again and again.
Elana says
Judy, thanks for letting me know that this bread is terrific!
Laurie says
Oh my gosh! If this isn’t the best bread I’ve ever had I don’t know what is! And the recipe was so easy to follow. I followed it exactly. After cooling the loaf I sliced it with my electric knife. Easy peasy. Then my husband and I each tried a slice with butter. Yum! We couldn’t stop there so I broiled a few buttered slices then topped them off with tomato slices, soft mozzarella, fresh basil, Paul Newman balsamic dressing, and a little balsamic glaze. We are very happy thanks to you ???
Elana says
Laurie, thanks for your incredible comment! I’m so glad to hear you and your husband loved this bread :-)
Jennifer says
Hi.
I made this bread today and it was just ok. I think I did something wrong, bit don’t know what… it was kinda spongy. Almost like it wasnt cooked all the way through. I cooked it as muffins not bread. I left it for 20 minutes. Then cooked for 15 more minutes and then turned off the oven but left the muffins in the oven. They seemed totally unaffected by the amount of time i left them in the oven.
Maybe spongy is normal???
Elana says
Jennifer, thanks for your comment! This bread is not spongy, it’s nice and fluffy. In order to get the best results use the recommended brands of ingredients and also make the recipe as written :-)
brenda says
This was not for me. Slimy as I’m chewing and after I swallow… yuck. Cooked as a loaf for over an hour and still seems too wet/slimy in the middle. I wish I would have used golden flax, maybe that would have helped. I also see people asking about arrowroot & honey but those are not listed as ingredients in this recipe so maybe I missed some ingredients. Maybe it’s a personal taste issue, or maybe those on keto are just desperate, but paleo/gluten free-wise I’ve found MUCH better bread recipes. No offense to the creator of the recipe just not for me.
Elana says
Brenda, thanks for your comment! If you use the brand of almond flour I recommend as well as large eggs, instead of regular size, this recipe will be perfect :-)
