Thanks so much!

This is great! I’m so thankful for a bread without the use of almond or coconut flours. I already use them in other recipes, and I try not to overdo. Since this doesn’t require flour, it doesn’t take up my supply and makes my family’s diet more versatile. I just made this today for the first time, and I was too impatient for the loaf to cool. I cut a slice carefully, thinking because it was warm, it would break apart. It did not! Wow! Thanks so much for a wonderful tasting as well as sturdy bread! I can make an actual sandwich with this! Yay!
Elana says
Courtney, I’m so happy to hear this bread is wonderful tasting and sturdy and that you’re enjoying making sandwiches with it!

Sue, thanks for letting me know this recipe made a perfectly flavorful loaf of bread!
Carrie says
Hi Elana,
I made this bread with golden flax meal today – added a little garlic and onion powder and topped with about 2 Tbl seeds (sunflower, pumpkin, sesame). I also used avocado oil in place of the olive oil.
The bread looks and tastes delicious but did not rise much so it’s a flatter loaf than expected. Do you think the substitutions could have impacted the rise? Is there any reason an 8×4″ pan would not work?
Thanks for your recipes!
Elana says
Carrie, thanks for your comment! If you use a larger size pan than I indicate for the recipe, your batter won’t fill it up and your loaf will be flat. An example is if you fill a 1/2 cup with 1/2 cup of water, the water comes to the top of the cup, if you transfer that 1/2 cup of water to a 1 cup measuring cup, it will only fill it halfway. That’s what’s happening to the bread when the pan used it too large. I’m so glad to hear this bread is delicious :-)
Neyha says
can’t wait to make this! do you know approximately how many slices the loaf should yield?
Elana says
Neyha, close to 24 slices if you cut it rather thinly :-)
Dean says
Looks good, but with all the flax is there an issue with gas/bloating?
Elana says
Dean, thanks for your comment, I haven’t had any issues with this when eating this bread :-)
Mary says
I am allergic to almond flour and flaxseeds….any other substitutes I can do for this recipe? thanks
Elana says
Mary, I haven’t tried that so not sure. I have a fantastic fan favorite Nut-Free Bread recipe on pg 36 of my third book, Paleo Cooking:

Can you use golden flax-meal instead of brown? I only have the golden, and need to use it before buying more.
Elana says
Sheila, I haven’t tried that so not sure :-)
