Low-Carb Cornbread

I’ve been serving this Low-Carb Cornbread Recipe at our Thanksgiving dinner for years and it’s quite a hit. We love it smothered in my Paleo Gravy, or dipped in my incredible 3-Ingredient Cranberry Cherry Relish. The boys enjoy it year-round when I melt butter and honey together and drizzle it over the warm cornbread straight out of the oven.

Low-Carb Cornbread Recipe

I loved making cornbread when I was growing up. Back then we used a mix, and smothered the cornbread in margarine, rather than wholesome butter. But that was the 1970’s when everything was low-fat, at least in our house. Now we know better and I make this grain-free, paleo cornbread which is totally corn-free!

Keto Cornbread Recipe

This Low-Carb Keto Cornbread is made with 6 ingredients in total. This recipe is so dang easy it won’t bog you down when you’re cooking your Thanksgiving dinner. I often make it a day ahead of time and remove it from the skillet, wrap it in a paper towel, then zip it into a plastic bag to store in the fridge. It will keep for up to 4 days when stored this way.

Print Recipe
  1. In a food processor combine almond flour, flaxmeal, baking soda, and salt
  2. Pulse in apple cider vinegar and eggs
  3. Transfer batter to a greased 9 inch cast iron skillet
  4. Bake at 350°F for 20-25 minutes
  5. Serve
Mama mia! This is the best thing I’ve put in my mouth for a long time! Great flavor and texture!

Sweet Keto Cornbread Recipe

If you would like to sweeten this Low-Carb Cornbread Recipe you can add ⅛ teaspoon of stevia. I’ve made it that way and it turns out quite well. I think it would also be amazing with a tablespoon or two of honey added to the recipe, but I haven’t tried that so not sure if other ingredients will need to be adjusted accordingly.

  1. Omgosh!!!! We love cornbread and have been watching the carbs. This recipe was awesome. I did add a little stevia, i also added chopped tame jalapeños to the batter and layered 1/2 batter, then shredded cheddar, then the other half of the batter. Moist, delicious and a real surprise. Thank you. When will you post nutritional content?

We’re still working on nutritional content which is an incredibly expensive endeavor since each recipe’s data needs to be calculated by hand and then entered here –but I do have that info for every single recipe in each of my 3 books. I’m so happy to hear that this cornbread is Omgosh delicious!

  4. Can you make it with almond milk and mix it with the acv to get a “buttermilk” flavor? And crazy question but does adding kernel corn still make it keto?

  5. So i was fighting a cold tonight and just wanted domething easy….ever heard of “toad in the hole” its an English thing where you bake sausage into a pan of yorkshire pudding. No wheat for me. So I tried squishing hot dogs ( high end) in a pan of your cornbread dough. Came out delish. Pretty too, If i could figure out how i would up load a pic for you :)

  6. Hi I am allergic to nuts. what can I sub for the Almond Flour? Or do you have a nut free version? I find a lot of recipes I’d like to try but the almonds have to be eliminated.
