Keto Raspberry Lemonade Muffins
Ingredients
- 1 cup blanched almond flour (not almond meal)
- ⅛ teaspoon baking soda
- ⅛ teaspoon celtic sea salt
- 3 large eggs
- ¼ cup grapeseed oil
- 1 tablespoon lemon zest
- ⅛ teaspoon vanilla stevia
- 1 cup frozen raspberries
Instructions
- In a food processor, pulse almond flour, baking soda, and salt
- Pulse in eggs, oil, lemon zest, and stevia for 20 seconds
- Stir in raspberries by hand
- Divide batter between 8 paper lined muffin cups
- Bake at 350°F for 30 minutes
- Cool 30 minutes
- Serve
Are Almond Flour and Coconut Flour Keto?
Now let’s talk about ingredients, for this recipe and for keto baking in general.
The most frequent keto baking question I’m asked is, can I use coconut flour in place of almond flour and vice versa. Unfortunately, the answer is no, that won’t work.

My favorite keto flour is almond flour, I’ve been using it for over two decades.

In addition to choosing the best low-carb flour, finding the right sweetener can be one of the most challenging aspects of the Keto Diet because there are so many options!

Banana muffins (Paleo without eggs), modified from Elana’s wonderful recipe and with her enthusiasm for eating healthy for each of our body’s needs:
3 ripe bananas
1 Tbs vanilla extract
2 tsp baking soda
1 tsp lightly flavored vinegar (Rose vinegar)
2 Tbs ground chi seed + 2 Tbs hot water to gel
1/4 c honey
Mix well in food processor, pulse then run
Pulse in optional 1/8c – 1/4c raspberries or blueberries, and/or zest from 1 lemon
Add 2 1/4 c almond flour (finely ground)
Pulse to mix – Mixture will be stiff.
Put into mini-muffin tray, top with 1 walnut or pecan or blueberry
350F preheated oven for 37min
Baking dehydrates the muffins but they do not rise much due to no eggs. The food processor helps make them fluffier than if mixed by another method.
Cool thoroughly, or spoon out one hot because when hot they fall apart.
Enjoy!

I made the carrot banana muffins- very moist and rich, but I felt they needed to be sweeter.
Any suggestions for a sweetener ?

JoAnn, thanks so much for your comment! I like to keep the sweetness low for the recipes here. It works for me because my palate has adapted and most things taste incredibly sweet to me –a carrot is like candy now. But feel free to play with the recipes and adapt them to your needs!
