Easy Keto Raspberry Lemonade Muffins are the answer to your low-carb diet baking prayers and are just another one of my fabulous recipes with almond flour.
Keto Raspberry Lemonade Muffins
Ingredients
- 1 cup blanched almond flour (not almond meal)
- ⅛ teaspoon baking soda
- ⅛ teaspoon celtic sea salt
- 3 large eggs
- ¼ cup grapeseed oil
- 1 tablespoon lemon zest
- ⅛ teaspoon vanilla stevia
- 1 cup frozen raspberries
Instructions
- In a food processor, pulse almond flour, baking soda, and salt
- Pulse in eggs, oil, lemon zest, and stevia for 20 seconds
- Stir in raspberries by hand
- Divide batter between 8 paper lined muffin cups
- Bake at 350°F for 30 minutes
- Cool 30 minutes
- Serve
Are Almond Flour and Coconut Flour Keto?
Now let’s talk about ingredients, for this recipe and for keto baking in general.
The most frequent keto baking question I’m asked is, can I use coconut flour in place of almond flour and vice versa. Unfortunately, the answer is no, that won’t work.

My favorite keto flour is almond flour, I’ve been using it for over two decades.

The Best Keto Sweeteners
In addition to choosing the best low-carb flour, finding the right sweetener can be one of the most challenging aspects of the Keto Diet because there are so many options!

Just finished making a double batch of these muffins. The only substitution I made was using 1/4 tsp regular sugar instead of the 1/8 tsp stevia as I didn’t have any artificial sweetener. I used a #24 ice cream scoop and ended up with 20 muffins. I guess I could have left out the sugar as I don’t miss any sweet taste. This is a great recipe and thank you for sharing it.

I just have the plain Stevia drops – the bottle looks the same as the one you used, but mine’s not the vanilla creme. Could I use my Stevia instead and just add some vanilla to the recipe? What quantity of both should I use? Thanks so much for this recipe – I really want to try it.

Amazing! Beautiful, puffy, great tasting muffins! I’ve had a challenge finding any sweetened keto recipe that doesn’t make me feel sick. Both the combination Erythritol/stevia and Erythritol/Monk Fruit extract that I’ve used in other keto recipes make me feel sick.
