Easy Keto Raspberry Lemonade Muffins are the answer to your low-carb diet baking prayers and are just another one of my fabulous recipes with almond flour.
Keto Raspberry Lemonade Muffins
Ingredients
- 1 cup blanched almond flour (not almond meal)
- ⅛ teaspoon baking soda
- ⅛ teaspoon celtic sea salt
- 3 large eggs
- ¼ cup grapeseed oil
- 1 tablespoon lemon zest
- ⅛ teaspoon vanilla stevia
- 1 cup frozen raspberries
Instructions
- In a food processor, pulse almond flour, baking soda, and salt
- Pulse in eggs, oil, lemon zest, and stevia for 20 seconds
- Stir in raspberries by hand
- Divide batter between 8 paper lined muffin cups
- Bake at 350°F for 30 minutes
- Cool 30 minutes
- Serve
Are Almond Flour and Coconut Flour Keto?
Now let’s talk about ingredients, for this recipe and for keto baking in general.
The most frequent keto baking question I’m asked is, can I use coconut flour in place of almond flour and vice versa. Unfortunately, the answer is no, that won’t work.

My favorite keto flour is almond flour, I’ve been using it for over two decades.

The Best Keto Sweeteners
In addition to choosing the best low-carb flour, finding the right sweetener can be one of the most challenging aspects of the Keto Diet because there are so many options!

I would use two eggs (instead of three) and add 1/4-cup honey or agave; I also prefer olive oil or safflower oil, as grape seed oil does not agree with me.
I’ve also had success in baking vegan scones by using ripe bananas as the egg substitute, and adding 2TBSP of Arrowroot powder to 2.5 cups of almond flour. Looks like this recipe doesn’t need the Arrowroot, but I haven’t tried to make it yet.

Someone mentioned a blender instead of a food processor. That would be easier for me as well however would it be better just to stir it vigorously in a bowl for a while ? That’s if you didn’t have a food processor on hand in the moment ?

Whether it was having them pick the leaves off the thyme when they were toddlers, or teaching them the steps of writing a recipe (as I developed one) when they were in middle school, they’ve always been an important part of this website and my books! 18 and 19! How fast time flies. I have been using your recipes and suggesting your website to others for many years. I can always count on your recipes working and tasting great, these ingredients are too costly to waste on a recipe that doesn’t turn out well. I certainly appreciate your expertise and sharing and caring for others.
I am about to make these muffins, will only substitute the raspberry with blueberry which I have on hand.
Oils that will work are coconut, olive, avacado, sunflower, and sesame.

When I first started preparing Elana’s recipes, my poor old food processor had died. therefore I had to mix by hand. All the recipes I tried worked beautifully. Now that I replaced the food processor I know I can go either way!
