Taking a walk down memory lane, I’ve been whipping up homemade fudge since I was a girl, when I made homemade Christmas candies, placed them in Chinese food containers, and tied ’em up with pretty ribbons. My parents drove me to our friends’ homes to drop off my homemade holiday gifts.

My favorite thing about this low-carb dessert, other than its incredibly rich chocolatey flavor, is that it’s an easy fudge recipe, so no issue if you need a last-minute dessert.
3-Ingredient Low-Carb Fudge
Ingredients
- 3 cups chocolate chips
- 1 cup full fat coconut milk
- ¼ teaspoon vanilla powder
Instructions
- In a medium pot, melt chocolate and coconut milk together over very low heat
- Stir in vanilla powder
- Transfer mixture to a parchment paper lined 8 x 8 inch baking dish
- Refrigerate for 3 hours, until firm
- Serve

What is Vanilla Powder?
The organic vanilla powder in this dairy-free fudge recipe is a pure product that is simply vanilla seeds scraped out of the pod. It perfumes this 3-Ingredient Low-Carb Fudge recipe with a special aromatic flavor. If you can’t get your hands on the vanilla powder, grab a couple vanilla beans instead.
Low-Carb Fudge Recipe
For best results, use the chocolate linked in this recipe. Like the vanilla powder, it’s the highlighted text in the ingredients section of the recipe. Use chocolate that is at least 70% cacao or the fudge will not set up properly.

The Best Low-Carb Fudge Recipe
Another tip for this healthy low-carb christmas dessert? When I make it, I let the flaps of the parchment paper hang over the sides of the dish. This creates a little hammock so that it is super easy to remove the fudge.

I’m often asked, when is this fudge ready to cut? It should be firm and well set before you stick a knife in it. If it feels soft to the touch it needs to be chilled longer.
What is the Easiest Way to Cut Fudge?
The easiest way to cut fudge is with a sharp knife that you’ve run under warm water. Dry the knife and then it will glide through the fudge.
How Do You Store Fudge?
I store 3-Ingredient Low-Carb Fudge in the refrigerator. It will keep for up to one week stored this way. If it lasts that long!

I made this recipe using Trader Joe’s coconut cream (expiration date of 2018) and an expensive brand of chocolate by Callebaut. Having no prior experience with coconut cream, I did not know what to look for. It was a solid mass in the can, with about a teaspoon of liquid at the bottom. It had a bit of an undesirable aftertaste, but I did not know what it was supposed to taste like. I did proceed with the recipe. The texture turned out fine- I experimented with putting the majority in the 8X8 pan as suggested and some in my silicone 1″ ice cube tray. The taste, however was not pleasant. I think that something was wrong with the coconut cream and I should have trusted my instinct and not wasted my chocolate! I will attempt the recipe again with the recommended coconut milk product. Thanks Elana for another easy and decadent sweet treat.

Robyn, Trader Joes coconut cream does not actually have the coconut cream at the top! I know. Strange. You have to buy the normal kind at the grocery store and make sure it has the pure white cream at the top. It should make a huge difference!

I use Trader Joe’s Organic Coconut Milk – ingredients organic coconut and water – which has a thick layer of coconut cream at the top and works in all the recipes I have tried. Be sure you aren’t buying the Lite version, which is quite different.

To make this recipe, can you substitute something else for coconut milk? As in a type of regular milk, but 2% or something?

Anya, I haven’t tried that, but I don’t think milk would have enough fat to work in this recipe.

I made this recipe twice and it never got hard enough to cut in squares. We still managed to eat it with a spoon :) and the taste was great! I am thinking it will not get firm enough without the vanilla powder? Thanks for posting the source for the ingredients.

Jodie, thanks for your comment. The vanilla powder does not impact the firmness of the fudge, it’s for flavoring. What’s most important is to use the dark chocolate and full fat coconut milk recommended in the recipe. If you use semi-sweet chocolate, or lite coconut milk the fudge will not get hard enough to cut into squares.

Could you tell me how many ounces you think a cup of chocolate chips would be, please? 70 per cent chocolate is more readily available in bars here in the UK so just want to get the measurements correct.

We had some Equal Exchange bittersweet chocolate chips (organic) leftover in pantry from last year, two 10 oz. bags seem to be equivalent to 3 cups measured. We used 1 1/2 teaspoons vanilla extract, and tomorrow after shopping for vanilla beans will try another recipe with raw organic beans to completely use our leftover chocolate chips. I hope the chips are okay, we are just past expiration of (10.24.16).

Dear Elana, hope you are feeling good. Love this recipe, however I need a sub for the chips, which where I am (Jerusalem) they contain white sugar. How many grams of a 80 or 100 % chocolate bar or how much cacao or cocoa do I use in place of the chips? I’d like to make this for a children’s Chanukah party.
