For those who don’t eat dairy, just freeze ripe bananas, thaw slightly, blend in food processor until smooth, and it’s ready to serve! Delicious! Add a bit of cinnamon if you like, or some ripe mango! Be well, Elana!

Thank you, Elana, for sharing your recipes. I have been a lacto/ovo/vegetarian since the late 1960s. Along the way, I’ve developed an autoimmune problem as well as fibromyalgia. I try to eat as much protein as I can (I start the day with 2 eggs). Cow’s milk-is inflammatory (they don’t sell A2 milk where I live) so I eat a bit of goat and sheep cheese and nuts. I rarely have anything with beans. I don’t eat any sugar with the exception of honey in my almond flour baked goods (made from your recipes) and I don’t eat treats that often anyway. The only grain I can handle is corn, but I avoid it as much as possible. I also stay away from nightshades because of the pain factor. So… that leaves me with vegetables except for nightshades, a bit of cheese, eggs and nuts. I do appreciate your recipes and your advice.

I made the mistake of freezing them in the peel. Once. After they are frozen it is very difficult to get the peels off, you basically have to let them thaw.

Ginger. You can make up a bottle of tea made with ginger and sip it as you go. Worked when I went sailing and was the first time ever I didn’t get sick. And it was very windy. There is ginger chewing gum and ginger supplements and ginger chews. I live in the mountains.

You suggest using “heavy whipping cream” in some of your dessert recipes – did you know that most “heavy whipping creams” contain carageenan, a red algae which is indigestible in the human body and therefore sets up a perfect inflammatory environment, especially for those of us with colitis, Crohn’s and other irritable bowel issues?

There is a vegan version of this, it’s called ” nice cream ” it’s frozen bananas and what ever else you fancy. Frozen mango is delicious, cocoa or cacao powder is wonderful. My kids love the bananas with almond butter stirred through. Then it’s vegan, and paleo without the cream.
As for lchf, we’ve been using coconut cream as a base and freezing pops out of it, coffee pops are especially delicious!
But now it’s winter here in Australia, so all our bananas are going into banana breads!
Diet wise, I was on lchf for a LONG time and my weight loss had stalled majorly, so I’ve had to drop my fat to a moderate level, still keeping the carbs low, also had to really watch the amount of protein I eat. My partner who would be a type two diabetic is dairy free, so tends to eat paleoish with higher fat. She struggles that coconut is the only fat available to her ( can’t eat any nuts as she has SIBO ) for snacking etc.

Can she have pumpkin seeds? I often use them on my salads and as a replacement for nuts in breads. The ice cream recipe was great though my bananas were a little overripe. also I didn’t have heavy cream but had half n half which needed to be used. So after mixing it together and adding a bit of vanilla, I put it in the freezer and it turned out perfect. I try to follow Elana’s recipes accurately the first time and they all turn out perfect. I have made the flax bread a dozen times. Thank you Elana. I just returned your paleo book to the library today.
