Given how hot it’s been around here lately, the boys have been jonesing for ice cream, and I’m more than happy to indulge them with my homemade, frozen treats. They’ve been asking for a chocolate cherry ice cream, which may be coming here soon. For now, enjoy this gluten free, dairy free Cherry Strawberry Ice Cream.
Cherry Strawberry Ice Cream
Ingredients
- 1 13.5 ounce can full fat coconut milk,
- 1 10 ounce package frozen strawberries
- 1 10 ounce package frozen cherries
- ¼ cup agave nectar or honey
- 1 tablespoon vanilla extract
- ¼ teaspoon almond extract
Instructions
- Blend all ingredients in a vitamix
- Pour into ice cream maker and process according to instructions
- Serve

I’m new to the SCD diet and found your site. I see that you have agave as a sweetener but I thought that was not allowed? I’m struggling to sort through recipes to find which are SCD appropriate.

My Vitamix cookbook has a recipe using 8 oz of frozen fruit and 8 oz of milk or cream of your choosing along with the other ingredients listed here. Process on High using the plunger to push the frozen fruit into the blades. You will have ice cream without the need for an ice cream freezer, ready to serve. I have tried several different nut milks, and cow’s milk or cream. The cow’s milk makes much creamer product. The nut milks work very nicely, but a little more ‘icey’.
