I’ve been serving this low-carb cornbread recipe at our Thanksgiving dinner for years and it’s quite a hit.
It’s so good though, that the boys enjoy it year-round.
When I serve it to them, I melt butter and honey together and drizzle it over the warm cornbread straight out of the oven.

I loved making cornbread when I was a kid growing up in the 1970s
Back then we used a mix, and smothered our cornbread in margarine. It was packed with sugar and one of my favorite treats.
Now I make this special low carb keto cornbread recipe.

And the secret is out –there’s no corn in my cornbread. Why? I can’t digest corn.
My corn free cornbread is a bit of an oxymoron, but once you taste it, you won’t know the difference!
How to Make a Cornbread
This recipe for Gluten Free Cornbread Skillet is made with six ingredients total.
All you need to do is throw the almond flour, flaxmeal, salt, and baking soda in a food processor, then pulse in the eggs and apple cider vinegar.
Transfer the batter to a greased cast iron skillet pan to bake and voilá.
Warm keto cornbread straight out of the oven.
How to Make Cornbread Homemade
This homemade corn bread recipe is so dang easy it won’t bog you down when you’re cooking Thanksgiving dinner.
It’s also wonderful to throw in the oven as an after school snack for your little ones on a chilly day.
In fact, they might want to help you make it like mine did.
Gluten Free Cornbread Skillet

Ingredients
- 2 cups blanched almond flour (not almond meal)
- ¼ cup golden flaxmeal
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- 5 large eggs
- 2 tablespoons apple cider vinegar
Instructions
- In a food processor combine almond flour, flaxmeal, salt, and baking soda
- Pulse in eggs and apple cider vinegar
- Transfer batter to a greased 9 inch cast iron skillet
- Bake at 350°F for 20-25 minutes
- Serve
How to Store Cornbread
I often make this Gluten Free Cornbread Skillet a day ahead of time.
After it bakes, I let it cool, then remove from the skillet.
To store, I wrap the cornbread in a paper towel, then zip it into a plastic bag and place it in the fridge.
It will keep for up to four days when stored this way.
Cornbread Almond Flour
The almond flour in this cornbread gives it an incredible flavor profile.
It makes me so happy to eat healthy keto cornbread and serve it to my family!

Corn Bread Sweet
If you’d like cornbread that’s sweet, but still keto, you can add one-eighth teaspoon of stevia to the batter.
I’ve made it that way and it’s fantastic.
I think it would also be amazing with a tablespoon or two of honey added to the recipe, but I haven’t tried that so not sure if other ingredients need to be adjusted accordingly.

My cornbread didn’t look anything like yours. It wasn’t awful but not great. It seemed too thick from the beginning and the color was a grey brown. I followed recipe. Any idea what happened?

Waiting to pull this CB out of the oven.
I used 3 tbsp of brown swerve and 2 tbsp of confectioners swerve for sweetness.
I rubbed the brown sugar in with my hands, added the confectioners eggs and ACV.
Mixed with hand held.
OK, verdict: this is the corny-ist non corn in the bread bread I have ever tasted.

This looks So good & not only idle it paleo & , low carb plus keto friendly its Low fodmap friendly too.
I have been so sick & need to follow more of the lowfodmaps diet due to my Digestive system & leaky gut plus SIBO. Anyways I want to make this Thanksgibing I always feel deprived & left out , i too would like things others eat without suffering, so i was wondering you said you put in a skillet ? Well what if you dont habe a skillet & if we use a round cake pan or loaf pan?? What size do you recommend to use for the recipe provided so not to make too little & over cook etc.. ty so much , I enjoy following you & hope someday they find out what’s wrong with me too my health is so bad I am not living anymore & just existing. Ty for all your recipes as well as your personal struggles it makes me feel like I’m not alone & trying to not give up. you never did and you got better . Ty so much you are so inspiring .

Hiya Jen… My cast iron is 9 inches, I baked mine last nite.
It is moist. Pan works fine. I tested with toothpick at the 20 minute mark…then at 22 min. You know your oven best.

Elana, in all the years I have followed you, I cannot tell you how many books I’ve bought and shared. I have never tried a bad recipe from you. Everything always turns out so unbelievably well. Around 2 in the afternoon I found myself with a sudden craving for salmon. I was expecting to just feed myself since my mother had made some rolled grape leaves for the family the night before. I wanted to know the same thing! I need a good sturdy cornbread type bread for my stuffing since we’re gluten free. Last year the bread I used was soggy and not good. It ruined the whole recipe. If you come up with something please please please report back! This cornbread tastes absolutely delicious (as all of Elana’s recipes always do) on it’s own but nut flours do not absorb liquids and fats well so not sure it would work…

I used it last year for my cornbread dressing and it came out delicious. I used slightly less chichen stock. but otherwise made it the same way I do with regular cornbread. I made regular and low carb dressing… my family ate both and loved it.

Many are skeptic that recipes with so few ingredients and unusual flour (almond flour) could be so tasty. However, this “cornbread” recipe has won over many converts. Absolutely EVERYONE loves it!
