I’ve been serving this low-carb cornbread recipe at our Thanksgiving dinner for years and it’s quite a hit.
It’s so good though, that the boys enjoy it year-round.
When I serve it to them, I melt butter and honey together and drizzle it over the warm cornbread straight out of the oven.

Back then we used a mix, and smothered our cornbread in margarine. It was packed with sugar and one of my favorite treats.

And the secret is out –there’s no corn in my cornbread. Why? I can’t digest corn.
My corn free cornbread is a bit of an oxymoron, but once you taste it, you won’t know the difference!
How to Make a Cornbread
This recipe for Gluten Free Cornbread Skillet is made with six ingredients total.
All you need to do is throw the almond flour, flaxmeal, salt, and baking soda in a food processor, then pulse in the eggs and apple cider vinegar.
Transfer the batter to a greased cast iron skillet pan to bake and voilá.
Warm keto cornbread straight out of the oven.
How to Make Cornbread Homemade
This homemade corn bread recipe is so dang easy it won’t bog you down when you’re cooking Thanksgiving dinner.
It’s also wonderful to throw in the oven as an after school snack for your little ones on a chilly day.
In fact, they might want to help you make it like mine did.
Gluten Free Cornbread Skillet
Ingredients
- 2 cups blanched almond flour (not almond meal)
- ¼ cup golden flaxmeal
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- 5 large eggs
- 2 tablespoons apple cider vinegar
Instructions
- In a food processor combine almond flour, flaxmeal, salt, and baking soda
- Pulse in eggs and apple cider vinegar
- Transfer batter to a greased 9 inch cast iron skillet
- Bake at 350°F for 20-25 minutes
- Serve
How to Store Cornbread
I often make this Gluten Free Cornbread Skillet a day ahead of time.
After it bakes, I let it cool, then remove from the skillet.
To store, I wrap the cornbread in a paper towel, then zip it into a plastic bag and place it in the fridge.
It will keep for up to four days when stored this way.

Corn Bread Sweet
If you’d like cornbread that’s sweet, but still keto, you can add one-eighth teaspoon of stevia to the batter.
I’ve made it that way and it’s fantastic.
I think it would also be amazing with a tablespoon or two of honey added to the recipe, but I haven’t tried that so not sure if other ingredients need to be adjusted accordingly.

Deceitful to call this cornbread. It isn’t yellow like the photo and has the same ingredients as many normal keto breads. Nothing cornbread-like about it at all. I’m from the south and have many delicious cornbread recipes and many keto recipes. So far, there is nothing close to keto cornbread including this recipe.

This is my favorite keto corn bread recipe.
I am also from the south, It is a little different, everything keto is different. but we like it anyway as a healthy alternative and it is easy to make.
P.S. Flax does come in two colors. One is darker It is the most available, than the other, golden flax is yellow or golden and They seem to taste abt the same.

Yes! That’s exactly what I did this Thanksgiving and everyone loved the stuffing. Some even said it tasted better than the stuffing with cornbread.
I had a fail making this bread substituting 2 cups of Cassava flour since I’m allergic to almonds and almond flour. It was extremely dry and not coming together at all, so I added about a cup of milk which worked beautifully. I had been keeping the golden flax meal in the refrigerator so I don’t know if that was why or because the ratio of Cassava flour and almond flour are not equal. I plan on making it again but not before allowing the golden flax meal to get to room temp.

Faythe, thanks for your comment! I’ve made this recipe using flaxmeal straight out of the freezer and also other times at room temp and it comes out equally well either way. Glad you figured out how to make your substitution work since cassava and almond flour are very different flours. I may have to make corn bread stuffing one of these years since it sounds like everyone is loving it :-)

So I tried this recipe again with 1 cup Cassava flour. I finally found a website that clarified the ratio of Cassava to Almond. It turned out much better without having to add milk.
BTW I am allergic to hen eggs so I use 4 duck eggs (they are noticeably bigger than hen eggs).

Yes I used this recipe last year and no one knew that it wasn’t the real thing. I have mine for this year in the oven as we speak. I like to add a 1/4 cup of cashew milk kefir to give that added buttermilk twang without the carbs.

Do have experience using oooflavorings (Amazon.com) in keto recipes, one of which is ‘cornbread’? If it could impart an authentic cornbread flavor to this recipe. it would be wonderful.

I’ve have made a couple of your Christmas cookies and they are were great. Your Keto Cornbread recipe is *wonderful*. I baked mine for 30 minutes to get it a dark golden brown. My husband said this recipe is a “repeat” and that it tastes as close to cornbread could be without being made from corn meal. I am so thrilled to have found your recipe (it beats another recipe – not yours – I’d tried hands down) as we strive to eat keto weekdays and some weekends. I will serve this all fall and winter with soups, stew, and chili.
Lots of keto recipes are called by the same name as non-keto and adding “keto” before the name tells people what to expect. Perhaps the complainers are unfamiliar with keto. There is no way corn would ever be in a keto cornbread recipe. ;) See you at Christmas!

I’m allergic to almonds as well as regular flours. I typically use Cassava flour for any baked goods. So in any recipes, I can use same amount of cassava flour as regular flours. Is that true of almond flour? I’m trying to figure out how much cassava flour (instead of almond flour) to use for this recipe.

I don’t know how to post a picture, but this came out beautiful. Since I’m mainly eating very low carb and can tolerate wheat, I added 2 teaspoons of vital wheat gluten to the dry mix.
