Low-Carb Chocolate Zucchini Bread

Ingredients
- 1¼ cups blanched almond flour (not almond meal)
- ¼ cup cacao powder
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- 2 large eggs
- 2 tablespoons coconut oil, room temperature
- ¼ cup honey or maple syrup
- ¼ teaspoon vanilla stevia
- ¾ cup grated zucchini (4 ounces)
Instructions
- In a food processor combine almond flour and cacao powder
- Pulse in salt and baking soda
- Pulse in eggs, coconut oil, honey, and stevia
- Briefly pulse in zucchini
- Transfer batter to a parchment lined 6×4 small loaf pan
- Bake at 350°F for 35-40 minutes
- Cool for 2 hours
- Serve

As always your recipe for this paleo chocolate zucchini bread does not disappoint. It truly is the bomb. I followed your recipe with a few exceptions. I used 1/2 C of cacao powder, 1 tsp of vanilla extract, 1 cup of grated zucchini, 4 TB of Lakanto monk fruit sweetener and 1/4 C water. I lightly greased 24 mini muffin tins, filled the tins just scant of full and baked for 12 minutes. The muffins baked to sheer perfection, popped out of the tin with ease, are moist, delicious, chocolatey with a hint of “sweet enough” for a dark chocolate discriminating palate.

Made it for the first time .. and it was delicious! Thank you for the recipe!
Some little adjustments (more veggies and less sugar :)! ). It was still sweet enough.
– 1 cup zucchini
– 1/5 cup honey
– Vanilla extract instead of vanilla stevia
– handfull of 70% dark chocolate chips in the batter
Next time im going to try to put in a little bit more zucchini and less sugar. Perhaps some pecan nuts on top!
