Low-Carb Chocolate Zucchini Bread

Ingredients
- 1¼ cups blanched almond flour (not almond meal)
- ¼ cup cacao powder
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- 2 large eggs
- 2 tablespoons coconut oil, room temperature
- ¼ cup honey or maple syrup
- ¼ teaspoon vanilla stevia
- ¾ cup grated zucchini (4 ounces)
Instructions
- In a food processor combine almond flour and cacao powder
- Pulse in salt and baking soda
- Pulse in eggs, coconut oil, honey, and stevia
- Briefly pulse in zucchini
- Transfer batter to a parchment lined 6×4 small loaf pan
- Bake at 350°F for 35-40 minutes
- Cool for 2 hours
- Serve

I’ve appreciated your work silently for at least five years, but I recently came across some most insensitive comments, which berate you for not providing “nutritional information.” This moved me to let you know that there are plenty of us who truly understand and truly appreciate. Whomever commented those things clearly does not understand the “spoons theory” of chronic illness. One does what one can, when one can. For one’s own family. Then others. YOU clearly are doing both, with grace. Thank you.

I have made this several times this summer and we all really enjoy it. I double the recipe and bake in a 9 x 5 pan. I also use vanilla extract and leave the stevia out. One time I added chocolate chips, as well. I love how you don’t have to squeeze the moisture from the zucchini!
I planted a zucchini plant for the first time, this year and was looking forward to home grown zucchinis. Unfortunately, my plant flowered lots but never produced a zucchini.

This is for the person who planted the zucchini plant and didn’t get any zucchini. You may not know that like lots of other plants, Zucchini plants have male and female. If you plant flowered, and the blooms died and fell off, it is likely they had no male to “help them out” lol I know it’s hard to swallow that in some cases the male species is needed, but it’s true.
Check it out online. Just type in your question and you will get some answers. Try planting at least 4 plants to assure you have both male and female in the mix. I know, sounds crazy, but even at that you may still not get zucchini. I planted several last year and only got a few. This year, planted again, in a row and got lots of zucchini. GOOD LUCK

This loaf is wonderful. One of my favourite things about this recipe is that I don’t have to squeeze the zucchini! I double it to fit in a 9 x 5 pan. The only change I make is to leave out the stevia (which we don’t like) and add some vanilla extract instead. Sometimes I add chocolate chips for the kids as well. It’s a favourite at our place.
