I love ginger. This is not an overstatement. I use it in everything from condiments to cookies to beverages.
Ginger is one of my favorite spices. And yes, it is a spice, not an herb. Experts consider the roots of plants that are used for medicinal or culinary purposes to be spices (substances that come from non-woody plants are considered herbs).
Ginger has been used in Chinese medicine for thousands of years and is also a primary culinary ingredient in Chinese cooking. In our culture, ginger is considered a super food, or super spice. Whenever I get a little tickle in my throat, I throw a pot of Ginger Licorice Tea on the stove and drink it up. My boys like this concoction of mine quite a bit and ask for it when they feel under the weather. I will have a recipe for homemade ginger ale in my next book, so stay tuned!
