I love this dish because it’s great to start the day with a nice dose of green vegetables, and the boys adored how bright these eggs are.
Green Eggs are also amazing because they’re a fun food that doesn’t contain any dye, but they still have a bright green color!
Breakfast Ideas That Are Easy
My favorite way to dress up these green eggs is with gluten free bread and avocado.
I toast a piece of my Recipe for Bread with Almond Flour, then, by adding half a sliced avocado to the plate I balance my protein with blood sugar-stabilizing fat. This superfood combination will start your day off right.

To make this a recipe for green eggs and ham, simply dice up leftover ham and throw it into the green eggs while you’re scrambling them.

Green Eggs
Ingredients
- 4 large eggs
- 4 leaves large kale (30 g), do not remove stems
- 1 pinch celtic sea salt
- oil of your choice for frying pan
Instructions
- Place eggs, kale, and salt in vitamix
- Blend on high until smooth
- Heat oil in 8 inch frying pan over medium heat
- Pour egg mixture in pan
- Cook eggs to your preferred doneness
- Serve
As the boys grew older, we had Green Eggs several times a week.
And, I made them every St. Patrick’s day so that we could start our morning in the spirit with some good healthy green food!

When I put Kale in a smoothie – raw – it never bothers my stomach. Also in the Blendtec green soup which never quite gets to boiling, but gets hot. Of course, we don’t all have the same stomachs.

I’ve done this for years as a way to sneak more greens in. I use 1/2 lb organic spinach, and 1 clove of garlic to hide the taste, and 6 eggs. My husband and I would take turns quoting “Green Eggs & Ham”, and say we make green eggs & cheese. Fun food!

people who are sensitive to raw greens (thanks for bringing it up as i was never aware!) can easily steam/boil or cook the greens in the way they prefer and blend them with the eggs. i imagine you would wring out the excess moisture beforehand.

had to laugh…many years ago my sister made my nephews,,then in 1st and 2nd grade..green eggs and ham for breakfast. they must have shared this at school, because soon a social worker came to check on what was going on in the kitchen at their house.
