Gluten Free Orange Almond Flour Cake

Ingredients
- 2 small oranges, 6.5 ounces each
- 4 large eggs
- ¾ cup honey
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- 1 teaspoon baking soda
Instructions
- Wash the oranges and boil them whole (peel and all) for 1½ hours, or until soft
- Place whole oranges (peel and all) in a food processor and blend until smooth
- Pulse in eggs, honey, almond flour, salt, and baking soda until well combined
- Pour batter into a greased 9 inch springform pan
- Bake at 375°F for 35-45 minutes, until a toothpick stuck in the center comes out clean
- Cool in the pan for 2 hours
- Serve

If you’ve never had orange cake you’re in for a treat.
I first came upon an orange almond cake recipe in the 1990s in one of Claudia Roden’s cookbooks, The Book of Jewish Food.
Roden is a British cookbook author, food scholar, and cultural anthropologist. She is also one of my heroes.
According to Roden, orange almond cake is a traditional Sephardic recipe commonly served at Passover.

However, using the orange with its peel is what makes my orange cake with almond flour moist and totally unique.
Yes, as I mentioned, use the entire orange, including the peel! Make sure your oranges are fresh and sweet so the cake is fresh and flavorful.

I made the orange cake exactly as you said, it was one of the best cakes I have ever made! Gave half to our neighbors (who donated the oranges) and they also loved it. So I decided to try Meyer lemons and made some adjustments based on the comments I read below. I boiled the two lemons (totaled 13oz) and found that they took a far shorter time. At about 40 minutes one had deflated some so I would recommend watching them and only shooting for 30 minutes max. I believe it affected the cake as there was less juice inside the lemon after it deflated, and I had added 1TB coconut flour due to some of the comments. The slight dryness could have been affected by less juice in the lemon or the added coconut flour, I don’t plan to add the coconut flour next time. I also changed the honey straight across to maple syrup to make it Fodmap friendly. It did stick to the pan, the orange cake didn’t, so I would use parchment paper or spray the pan first. The main problem with using lemons is the seeds, they didn’t get pulverized in my food processor like the orange seeds did. I would recommend taking the seeds out before you process the lemons. So for every one who wants to make a lemon version, here are some tried hints. Thanks for the recipe Elana, the orange cake will be my new potluck dessert!!!!

Baked it for my husband’s 42nd birthday yesterday..was a super hit with the entire family! Thank you so much for an easy healthy wonderful recipe! Followed the instructions as is, baked for 50 min with a piece of foil on top after the first 30 mins.lined the pan with parchment.decorated with powdered sugar, Mandarin orange segments and raspberries..looked so pretty!

I have made this several times and it is always a big hit. If it starts to darken on top before it is done you can simply set a piece of foil loosely on top, it will continue to bake and won’t burn.

Omg I am so sad right now! I don’t know why but followed the recipe. Had to take the cake out before 50 minutes because it was about to be burnt! But still it’s no quite cooked inside!! Shoul i have put it on the top rack of the oven? Bake it at 350? Smell good tho :/

Foods baked with honey will tend to darken sooner . I always set the timer 5 minutes less and keep a close eye on it at the end. It’s definitely done by 50 minutes. Dropping the temperature just a bit to 360 also seems to help. But Wow! What fantastic flavor. Love, love, love this recipe.

I baked this product 3 times because I like citrus cakes.
I use a conventional oven the 1st time exact to the recipe, great results.
I used a Breville Smart Oven the next 2 times with some challenges. 2nd bake at 375 degrees for 50 minutes and the cake burnt almost all the way through except 1″ in the center. 3rd bake at 375 for 40 minutes and the color was brown, not orange and the bottom was burnt 1/8″.
I wonder if lowering the temp to 350 degrees and bake 40 minutes would solve this problem. Please advise.

David, thanks for your comment! It sounds like you may need to have the smart oven temperature recalibrated so that it works as well as your conventional oven :-)

That is something I considered, but all other breads ( your bread recipes) and foods don’t have these challenges. And the oven is new.
