Dairy-free Mint Chip Ice Cream is made with a coconut milk base studded with dark chocolate chips. The only other ingredients you need to make this paleo dessert recipe are hemp seeds, honey, peppermint, vanilla, and water. That’s right, this ice cream is made with 7 ingredients total.
Last week I made a huge dinner of my Spicy Grilled Chicken, Roasted Broccoli and Kaleslaw for my older son and a couple of his buddies. My goal was to fill ’em with good grub before another big baseball tournament.
After they scarfed down their meal, the boys asked if I had any of that “special ice cream.” They then proceeded to feast on several of my dairy-free ice cream recipes including Banana and Coffee. A gang of three 13 year olds can be tough critics so I was very happy!
Vegan Mint Chip Ice Cream
Ingredients
- ½ cup hemp seeds
- 1 cup water
- 1 can full fat coconut milk
- ⅓ cup honey or agave nectar
- 1 tablespoon vanilla extract
- 1 teaspoon peppermint extract
- ¼ cup chocolate chips
Instructions
- Place hemp seeds and water in a vitamix
- Blend on high for 30 seconds until smooth
- Blend in coconut milk, honey, vanilla, and peppermint
- Blend in chocolate chips until they are in tiny pieces
- Pour into ice cream maker per manufacturer's instructions
- Serve

Thank you for this! I have tried so many different ways to make mint ice cream or smoothie/shake and it is never quite right. I hesitated to even try this tonight. But I did and we found a winner! The husband rolled his eyes when i told him it was mint but then he tried it and proceeded to eat an entire bowl of it. I was not sure on the hemp seeds making it taste odd so I used 1/4 c seeds and 1/2 c almond milk in place of the water. It was creamy and smooth and the flavor just right. No strange taste from the hemp seeds. Thanks again!

Hi, I’m De and I am new at this. I’m 74 and in pretty good health. But need to lose 15 pounds most of which is belly and thigh fat. As a nurse, I’m kinda scared of being in ketosis. I’ve read a lot on your web site and starting to feel more comfortable. I noticed that this is high fat and high calorie. How are the high calories burned off? Any help will be greatly appreciated. I just made this today! I love it! Very simple. I subbed 1 cup homemade almond milk for the hemp seeds and water because that is what I had on hand. The recipe has a little too much vanilla flavor for me, but that would be an easy fix for next time. Highly recommend!

For everyone asking about an ice cream maker, I made it directly in the Vitamix. I omitted the water and added two big handfuls of ice and followed the instructions in the manual for making ice cream in the Vitamix. It turned out great (although you might need to experiment a few times. I’ve made ice cream quite a few times, and the first few weren’t a great consistency.)

I’m considering purchasing a vitamix. Wondering why you would have to put the recipe into an ice cream maker when i’ve seen the rep make ice cream when demoing at costco? He turns the canister upside down to prove its frozen.

None of the ingredients in the recipe are frozen, so you have to get them cold somehow, hence the ice cream maker. I bet if you froze your hemp milk and coconut milk, it would work really well in the Vitamix! I have a Vitamix and love it. I use it every day. It really is so worth the money to me.
