Here is one of my favorite sandwiches –the Turkey Club. It’s a sandwich on Nutty Bread with avocado, mustard and of course, turkey. It’s hot here, so I’m very happy to make sandwiches for dinner and not have to spark up the oven, stove or grill.
These gluten-free sandwiches are full of protein and tasty to boot. For me, the avocado makes a great whole food substitute for mayo (I’m not in the mood to make homemade mayo today either, though when am I?). Here’s a meal in a sandwich. Goes great with any number of fresh green salads.
Turkey Club Sandwich
- 2 thin slices Nutty Bread or Paleo Bread
- smear of dijon mustard
- 2 slices avocado
- 2 pieces romaine lettuce
- 2 slices roasted turkey
- Toast bread
- Smear bread with mustard and avocado
- Place lettuce on bread, then turkey slices
- Close sandwich and eat
Note: I’ve received several questions about how to store the Nutty Bread that is found in this recipe. After baking, I let my bread sit on the counter overnight to cool, then wrap it in a paper towel, put it into a zip lock plastic bag and refrigerate. Stored this way it keeps for at least a week.
In my last post I had asked what types of recipes people were interested in seeing here more often. Thank you for all your suggestions and requests!
Now I’ve got a good list with which to head to the food lab (that would be my kitchen). In the meantime, I’ve compiled a list of links to several of my already published recipes that I think might be helpful until I can start posting new ones!
Coconut flour recipes for zebe912, Karen and Carlie.

Thanks again so much, I love all of your ideas!
Your sandwich looks delicious. I’ve eaten avocado for years but only as a dip. I started using it in sandwiches last year. I was visiting my sister in Prince Edward Island and she made a sandwich with chicken, avocado, lettuce, tomato and Brie cheese. I didn’t have the tomato and cheese on mine but it was still delicious. I made some recently with my cranberry bread and also with my orange and millet bread. No matter which bread I used, it always tasted delicious. Now I know what I’m having for lunch. Thanks so much for your great site. Yours is the best!! I love receiving your recipes.
That is one tasty looking sandwich.
I will have to make another batch of the Nutty Bread. I made it three times after you posted the recipe.
Never thought of putting avocado in a sandwich before. What a great idea!

That sandwich looks so good. Have been missing sandwiches with the summer here- I will have to bake up a loaf of that bread.
Wow! It looks heavenly!

That is one stunning sandwich! Can a sandwich be stunning? LOL Yes, I think it can … well, that one anyway. ;-) I know I would love all the flavors. Great idea on using avocado vs mayo, Elana!
Of course a sandwich can be stunning… especially when it’s a gluten free sandwich!! ;-)
Mmmm mm! I agree– looks great! <3

I will try this bread as soon as I can. I miss bread since I cant have dairy either and most store GF breads have that in them. One question, how long does this bread last and do you need to ref. or freeze it? thanks!
Thank you SOOOOO much for posting sandwich and bread recipes. I thought I would never taste bread again. And sandwiches were a thing of the past. But this looks delicious. I have never done much with avocado before, but I think I might have to try it. Thanks!

Oh Elana! I am coming to your house for lunch. That looks wonderful. I will have to try that bread. It’s a little pricey huh? I wish nuts were cheaper – they are sooooo good!
Hey Stephanie — I found http://www.nutsonline.com the best place for prices.
This is definitely one of my all time favorite sandwiches. Avocados are yummy and in season now :)
