We subscribe with a local farmer to receive a local produce box every other week. We love these boxes and have learned to eat celeriac root, burdock root, and all sorts of greens. We love receiving the box but we have been daunted by one veggie: Kale! Your recipes shed some much needed light on how to make a kale salad so I adapted a couple of your recipes to make one! I steamed the kale for a little while. I added cherries and mandarin oranges, and slivered almonds that I toasted and squirted the whole thing with balsamic spritzer – it was wonderful! I also served gluten free corn muffins with it. What a lovely Sunday evening supper.
I have bookmarked you and I will turn to you for future gluten free recipes! I have just been diagnosed with IBS and high sensitivity to gluten (although I do not have celiac disease), so I am looking for all the help I can find.
