Simple Bread
Ingredients
- 2½ cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- 3 large eggs
- 1 tablespoon honey
- ½ teaspoon apple cider vinegar
Instructions
- In a large bowl, combine almond flour, salt, and baking soda
- In a medium bowl, whisk the eggs, then add honey, and vinegar
- Stir wet ingredients into dry
- Transfer dough into a well greased mini loaf pan
- Bake at 300°F for 45-55 minutes on bottom rack of oven; until a knife comes out clean
- Cool and serve
Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

To store this bread, wrap in a paper towel, seal in a plastic bag, and refrigerate for up to 1 week.
This low-carb, high-protein, gluten-free bread is a cinch to make. It is especially tasty toasted, then topped with almond-butter, raspberry jam, and a sprinkle of salt. Add a second slice of bread to it and you’ve got a paleo PBJ!

I, too, made this in a regular loaf pan, but I actually liked it and will keep making it this way. IMO, a slice of this shorter, denser version is the perfect size to accompany a bowl of soup.
My question- Can you freeze it?

I love the few recipes I’ve already tried and am eager to do more, including this simple bread recipe. My question is, where do I find the correct sized loaf pan?? Hi. My bread didn’t rise at all. It came out about 2cm high. I’m a very novice baker! Could it have been the eggs? I wasn’t sure how whipped they should be

Robert, use the pan called for in the recipe and it will look exactly like mine does in the photo :-)

I have baked paleo bread a couple of times, but it always turns out horrible. I follow the recipes, but my breads never rise, they remain flat. What am I doing wrong?

Berta, which of my recipes are you referring to? If you LMK I can give you more advice, but in general, this is what happens when you don’t use the pan called for in the recipe :-)

I wanted to print your recipe but it came out all over the place and still did not get the whole recipe so ended up having to write it down anyway, wasted a lot of paper The reviews was good will let you know what I think later. Please correct the printing problem, it should be real simple like a lot of other sites. Thanks
