These dairy-free Ice Cream Sundae Cupcakes are the perfect summer treat. I love making this healthy dessert on the last day of school when the boys and their friends crowd into our house to celebrate.
Sometimes I assemble the Ice Cream Sundae Cupcakes for everyone. Other times I set up all of the components buffet style and let everyone have fun building their own Ice Cream Sundae Cupcakes. The great thing about this dairy-free dessert is that it’s fun, refreshing, and festive. If you use the Vegan Chocolate Cupcake recipe from my second book, Gluten-Free Cupcakes, then this is also an egg-free dessert. I love serving healthy desserts that everyone can eat, regardless of their food allergies!
Ice Cream Sundae Cupcakes
Ingredients
- 10 Chocolate Cupcakes
- 1 pint Vegan Vanilla Ice Cream
- 1 batch Whipped Cream Frosting or Coconut Whipped Cream
- 1 package gluten-free sprinkles
- 10 frozen cherries
Instructions
- Place cupcakes on a large plate
- Scoop ice cream on top of each cupcake
- Spoon whipped cream onto ice cream
- Top with gluten-free sprinkles and a cherry
- Serve

I made the chocolate cupcakes used in this “recipe” earlier this week for the first time; I’ll be making them many more times as they were delicious! Even though the cupcakes are made with coconut flour – which in my experience yields a somewhat dryer and dense cake, these cupcakes were incredibly moist and light. Bravo Elana! My guess is the agave used in the cupcakes is critical to keeping the batter moist and light.
BTW, the cupcake recipe calls for grapeseed oil, which I was out of, so I used basic canola oil (another very neutral flavor oil) and, as I said, were great. I will however use grapeseed oil on the next batch since that is Elana’s true recipe and since she is the master, I wouldn’t be surprised if they were even better :)
