This fabulous fall treat is perfect with a cup of Dandelion Coffee; they also make a festive Paleo breakfast or a wonderful Paleo dessert. If you’ve been wondering how to make biscuits from scratch, this easy biscuit recipe is for you. It literally takes mere minutes to make. You simply dump the ingredients into a food processor, scoop the batter onto a cookie sheet, and bake the biscuits in the oven.
Cranberry Orange Biscuits
Ingredients
- ¼ cup coconut flour
- ¼ teaspoon celtic sea salt
- ¼ teaspoon baking soda
- ¼ cup palm shortening
- ¼ cup coconut sugar
- 3 large eggs
- 1 tablespoon orange zest
- ½ cup dried cranberries
Instructions
- Place coconut flour, salt, and baking soda in a food processor
- Pulse in shortening, coconut sugar, eggs, and orange zest
- Remove blade from processor and stir in cranberries by hand
- Fill a ¼ cup scoop with batter
- Release batter onto a parchment paper lined baking sheet
- Bake at 350°F for 15-18 minutes
- Cool for 15 minutes
- Serve

Cranberry Orange Biscuits are an easy baking recipe that is mother-in-law approved. My MIL is a fabulous critic and foodie and I made this recipe for her several times until it was just right so that she would have a great Thanksgiving breakfast recipe to serve her guests.

I made then yesterday with the children. Easy to do. Looked great. Tasted delicieus! Consistence is just a little bit dry for the children. Next time more cocnutoil and maybe a fruity ingredient, i do t know jet, just to make them a bit more smooth.

This recipe works with Tropical Traditions brand extremely well and fairly well with the Nuts.com brand.
Unfortunately, when I made it with Coconut Secret and Let’s Do Organic brands it did not work at all, they yielded big flat cookies, rather than scones. Lots of testing –I made 4 new batches of this recipe to figure out this new conundrum, but lots of answers too! Thanks for your comment :-)

I made these with butter instead of palm shortening, and used a handful of chopped chocolate chunks instead of the cranberries. I don’t know if it was the butter that did it, but they spread out into perfect little cakey cookies. These are a good ratio for using coconut flour – not dry or “stick to the roof of your mouth” at all!

I don’t think this recipe will work with butter as it has a different percentage of fat to water than palm oil shortening.

I ‘ve made them yesterday and they taste great!!!! Although they aren’t crispy as a biscuit should be. They are soft inside. But the taste is super. Next time I will try them with 1/4 cup dried cranberries and 1/4 cup pieces of dark chocolate.

Use an oven thermometer… check the temperature and timing accuracy. Batter is similar to pancake batter… use a ¼ c. scoop. Batter thickens after a few minutes (coconut flour appears to take longer to absorb liquids). Make sure to pulse all ingredients thoroughly. Hope this helps.
