This fabulous fall treat is perfect with a cup of Dandelion Coffee; they also make a festive Paleo breakfast or a wonderful Paleo dessert. If you’ve been wondering how to make biscuits from scratch, this easy biscuit recipe is for you. It literally takes mere minutes to make. You simply dump the ingredients into a food processor, scoop the batter onto a cookie sheet, and bake the biscuits in the oven.
Cranberry Orange Biscuits
Ingredients
- ¼ cup coconut flour
- ¼ teaspoon celtic sea salt
- ¼ teaspoon baking soda
- ¼ cup palm shortening
- ¼ cup coconut sugar
- 3 large eggs
- 1 tablespoon orange zest
- ½ cup dried cranberries
Instructions
- Place coconut flour, salt, and baking soda in a food processor
- Pulse in shortening, coconut sugar, eggs, and orange zest
- Remove blade from processor and stir in cranberries by hand
- Fill a ¼ cup scoop with batter
- Release batter onto a parchment paper lined baking sheet
- Bake at 350°F for 15-18 minutes
- Cool for 15 minutes
- Serve

Cranberry Orange Biscuits are an easy baking recipe that is mother-in-law approved. My MIL is a fabulous critic and foodie and I made this recipe for her several times until it was just right so that she would have a great Thanksgiving breakfast recipe to serve her guests.

Hi Elana, I just made these and they are delicious. I followed the recipe exactly except for the cranberries which I left out. The batter was runny and had formed a flat pancake-like structure when I took the pan out of the oven. I confess that I did not pulse the mixture, is this why they were so runny? Many thanks, Marci

Great biscuits! and i even baked them a minute too long! I used slightly less coconut sugar, i didn’t have cranberries so i used chopped cherries and i replaced half of them with chocolate (thanks to whoever’s awesome suggestion that was!) and i used trader joe’s coconut flour – looked just like the picture. Thanks for a fabulous treat!

Can a Vitamix be used instead of a food processor ?

Mine was very wet dough and I was suspicious. Looks like big cookies. I used Let’s Do Organics. What kind of flour do you recommend, or could you repost the recipe with your preferred flour ? I hate wasting eggs etc.

Mine were as flat as pancakes also. I use let’s do organic coconut flour for all my baking. The recipe didn’t feel right to me as I was making it. Not sure what happened! Love all your other stuff! Seems like maybe this was supposed to have a little almond flour in it too??

I retested this recipe using the Let’s Do Organic brand of coconut flour and it did not work at all –I too had big flat cookies as a result. I remade it again (just to check) with Tropical Traditions and Nuts.com and it worked perfectly.
Thanks to your comment, which prompted more testing of newer brands of coconut flour, we now know that Let’s Do Organic coconut flour does not work in my recipes. I also tried these with Coconut Secret coconut flour and that did not work either.

Made these for breakfast today. If you allow the batter to rest a few minutes, it will thicken so that you can use a scoop. Even though I used an airbake cookie sheet, the bottoms scorched. I think coconut flour is easy to burn. My husband really liked them.

It would be most helpful to list the nutritional analysis as well as yield on recipes. With only 1/4 cup of coconut flour, how many biscuits does the recipe make? This looks tasy, but also a lot of fat and sugars!

Hey CJ, it makes 6, as stated above. Also, fat found in nut flours is healty and provides many nutritional benefits. Too much sugar? Leave some out or make them less often as a treat.
