Gluten Free Chocolate Chip Cookies with Almond Flour
Ingredients
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ½ cup salted butter, room temperature
- 1 tablespoon vanilla extract
- ½ cup maple syrup
- ½ cup chocolate chips
Instructions
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in butter, vanilla, and maple syrup until dough forms
- Remove blade from processor and stir in chocolate chips by hand
- Scoop dough one tablespoon at a time onto two parchment paper lined baking sheets
- Bake at 350°F for 7-10 minutes
- Cool for 15 minutes (do not handle prior or cookies will break)
- Serve

I began focusing on gluten free recipes in the 1990s.
Unfortunately, the gluten free diet was not enough to heal my gut. I took things a step further, eliminating rice, quinoa, potatoes, and corn which helped give me some relief from digestive issues and multiple sclerosis symptoms.
The Grain Free Diet
At that point, I went on a strict grain-free diet.
I became even more committed to this way of life when my son was diagnosed with celiac disease in 2001.
Diet restrictions for a little one are super tough, so I made it my mission to create delicious healthy treats for my 3 year old kiddo –he’s now 24 years old!
My easy recipes for dessert were created for him, and they are all gluten-free, grain-free, and lower carb.

Decades ago, before it was called the paleo diet, we simply referred to the way we eat as grain free and healthy.

These are definitely our favorite paleo chocolate chip cookie recipe! I know you don’t use Erythritol, but I gave it a try and the cookies turned out beautifully. I replaced the maple syrup with 1/4 cup of Swerve. We are trying to follow a more keto diet, so the substitution helped bring these treats in line with that goal.

I’ve made a few different choc chip cookies w/ almond flour, this by far is the BEST one! Tastes the closest to the flour laden kind, and aren’t dry like other almond/coconut flour cookies are. I even halved the syrup(completely by accident) and they were still delicious and sweet enough for my kids!

I have a question regarding sweeteners. In truth, I do NOT like the taste of artificial sweetners, including Stevia. I don’t even think that they are particularly good for us. Nevertheless, in my search for something palatable, I came across Erythritol, which for me doesn’t seem to have that after taste. I would like to know if you have every used it, and if so, what are your thoughts? Thank you so much!

Stacy, thanks for your comment. Stevia comes from an herbal plant and is not an artificial sweetener. Erythritol is made from corn, usually GMO, and a sugar alcohol so it is something I steer clear of :-)

Thank you for this recipe! I prepared these cookies for guests with dietary issues. We all enjoyed them!!
Modifications:
-I waited 20 minutes after the oven beeped at 350 degrees to make sure I had a hot oven.
– in addition to chocolate chips I sprinkied some toffee bits into the mix
-refrigerated for about one hour making them easier to handle. I think the fridge time was the key to making a pretty cookie that holds together. After scooping each batch, dough went back in fridge.
-sprinkled the tops with a little kosher salt
-as you suggested, let sit on the cookie sheet for exactly 15 min after baking
-I used almond flour that I had on hand (did not have the one recommended)

I make these amazing cookies all the time. However this time I made them with a newborn and accidentally left the food processor running while tending to my baby. When I came back to it there was a pile of liquid in the food processor and the consistency was not like anything I have ever seen before. Is this batch ruined? Any way to salvage it?
