Gluten Free Chocolate Chip Cookies with Almond Flour
Ingredients
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ½ cup salted butter, room temperature
- 1 tablespoon vanilla extract
- ½ cup maple syrup
- ½ cup chocolate chips
Instructions
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in butter, vanilla, and maple syrup until dough forms
- Remove blade from processor and stir in chocolate chips by hand
- Scoop dough one tablespoon at a time onto two parchment paper lined baking sheets
- Bake at 350°F for 7-10 minutes
- Cool for 15 minutes (do not handle prior or cookies will break)
- Serve

I began focusing on gluten free recipes in the 1990s.
Unfortunately, the gluten free diet was not enough to heal my gut. I took things a step further, eliminating rice, quinoa, potatoes, and corn which helped give me some relief from digestive issues and multiple sclerosis symptoms.
The Grain Free Diet
At that point, I went on a strict grain-free diet.
I became even more committed to this way of life when my son was diagnosed with celiac disease in 2001.
Diet restrictions for a little one are super tough, so I made it my mission to create delicious healthy treats for my 3 year old kiddo –he’s now 24 years old!
My easy recipes for dessert were created for him, and they are all gluten-free, grain-free, and lower carb.

Decades ago, before it was called the paleo diet, we simply referred to the way we eat as grain free and healthy.
Keto Diet and Intermittent Fasting
My eating plan has continued to evolve over the years. Paleo friendly potatoes and rice make me incredibly ill, and I thrive with a higher level of healthy fat, so I moved over to the keto diet.

I’ve always used grass fed butter and pastured eggs in your recipes. Back when I found you, paleo was low fat, and dairy free. You were the first grain free site that matched my simple ingredients and whole food approach and your recipes ALL translated well to butter, maple syrup (New England’s preferred sugar/local and local honey, as I’m baking for a family with 6 growing children). Now that the man is keto, we’ve branched out from the desserts and love all those tips as well. Hi, this is one of my go-to favorites! Someone mentioned that the cookies seem to spread out while baking, and this is true. I’ve found that adding 1/4 cup of almond flour helps to keep them from doing so and stay nice and round! Hope that helps :)

I’ve made several of your recipes over the years and this one was a fail. I never pressed mine down, and thank goodness bc they melted into one large cookie. I didn’t make an errors so I don’t know what went wrong. I’ll try one of the recipes with eggs from here on out.

I have tried different versions of your choc chip cookies and these are my favourite! I think for me the key is flattening them enough, and packing in the almond flour.
I also baked the “Crispy Chocolate Chip Cookies” this afternoon, which were my husband’s favourite.
